Put the bourbon in a small saucepan and heat it over low heat until it cuts in half. Leave to cool. Leave some space around the edges of the pastry to cover the center with the caramelized onions. Put the crumbled Gouda cheese on top of the onions that have been caramelized. Place the smoked ham slices that are very thin on top of the cheese. Spread the bourbon that has been boiled down over the ham and cheese. Put some chopped fresh parsley on top of the ham. To taste, add salt and black pepper. In order to make a rustic galette, fold the edges of the pastry over the filling. Put pressure on the edges to seal them. For a golden finish, brush the egg wash over the pastry. Place the galette on a baking sheet that has been lined with parchment paper. Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Take it out of the oven and let it cool down for a few minutes before cutting it. Enjoy while still warm!
