In Pokemon battles though? Gold is hyper offence. He's insane.

You don't battle him; you survive him - and if you are on his level, you match him. Not many people in the world can confidently dominate a battle with him (though there are some, like Red and May).

His Pokemon hit you with everything they have and will absolutely fucking destroy the surrounding terrain. Gold doesn't fight caring about the terrain. Its why he can't battle in urban areas unless its with limiters on (and even then, they tend to break).

Gold has had some training from both the Saffron Dojo and Bruno, especially because it helped in training both his Machamp and several other members of his team in fighting type attacks.

But, truthfully? He's vicious in a fight. He hits inhumanly hard and is strong enough to go blow-for-blow with a Machoke. His stamina and endurance means taking him down in return is incredibly difficult too. In a straight slugfest with Gold, you are almost certain to lose.

If you want to beat him? Fight smart. If you let him get hold of you, you are probably fucked.
