You may notice that Link is twitching his ears a little. Just as facial expressions and eye gazing carry additional meaning in regular human ASL, I imagine it would only be natural for Hylian Sign Language to implement some ear movements in this system as well. Here, he's kind of stretching his eartips up, to really emphasize just how high that "above" he talks about is located.
