Yesterdays Easter salad 🐣. Tossed around some spinach, barley, spring onions with a squeeze of lemon juice and salt. Topped the whole thing of with pan seared king oyster mushrooms. (no oysters were harmed ;))

While I was shopping around for groceries @marqt, I bumped into these beautiful looking sunchokes (or Jerusalem Chokes). I couldn't resist to leave them and picked them up to turn them in this delicious soup. They might look a bit funny, but they taste a bit sweet, a little nutty and with the texture of a daikon.  You can use them to make a puree, roast them in the oven or if you are lazy, make soup. Stir-fry fluffy quinoa with cauliflower and peas (aka cleaning ou the fridge) with some Terrasan furikake that I found in the organic supermarket. I love furikake, but I also know that the regular Japanese ones that I find in my Asian supermarket always consist some MSG. Which I like to avoid, so I am super stoked that I got my hands on this jar.

​I can eat this all day every day of the week and you probably to ;). I am talking about these fluffy yogurt pancakes with fresh blueberries and maple syrup. This recipe is one of my favorite trial & error outcomes when I was experimenting with blini recipes. Instead of cute, little blini's, mine turned out to be bold, fluffy. Add a bigger spoon of batter into the pan and voila; fluffy yogurt pancakes. You can find the recipe in the comment section. It's easy, foolproof, somewhat healthy if you don't pour out the whole bottle of maple syrup. 🙄 (at Rotterdam, Netherlands)
