Sous vide at 57.2°C for three hours. Under vacuum w/thyme, rosemary, garlic, kosher salt and my signature six peppercorn blend. I’ll finish it off on a seating hot plancha to get some tasty Maillard reaction action going on.

Going to serve with duck fat roasted baby potato and charred brussels sprouts.
