In response to the COVID-19 crisis, local food support system East End Food Institute has launched a Virtual Farmers Market to provide a market for many of the small producers who are impacted by the closure of restaurants and farmers markets. Mastiha at Calissa
Calissa in Water Mill mixes up some outrageous cocktail kits to go along with their to-go orders, and this one is our new favorite. KLEOS Mastiha is a luxury Greek spirit made from an ancient Greek superfood of the same name, mastiha. It comes from the sap from a tree that, on the entire planet, grows only on the Greek island of Chios, and for this reason enjoys PDO status (Protected Designation of Origin). The fragrance of the sap is reminiscent of eucalyptus, but in alcohol form has the fresh taste of cucumber or sweet tea, perfect for the warming weather. Mastiha sap is traditionally is used as a spice in Mediterranean food, particularly in baking. Every easter you can find Greek women making the traditional bread, tsoureki with mastiha. Mastiha is also a superfood, that kills h. pylori, the bacteria that causes acid reflux, and peptic ulcers, and even in liquor form, is good for the gut!
We’ll drink to that! The Kleo-Patra: 2 parts KLEOS Mastiha Spirit 1⁄2 part fresh lemon juice 1⁄4 part simple syrup 4 basil leaves Shake all ingredients vigorously. Strain over fresh crushed ice in a highball. Garnish with a lemon wheel and basil leaf.

Get Ready for Cinco De Mayo: Showfish Style
Showfish at Gurney’s Star Island Resort & Marina in Montauk was the hot spot of summer 2019, and this is the recipe for their most requested cocktail. The kick of house infused pepper tequila, mixed with the brightness of fresh strawberries is outstanding. We can’t wait to see what they have in store for us when they open this summer!
Cocktail Name: 1 Tequila 2 Tequila
Description: The ‘1 Tequila 2 Tequila’ is the most requested drink at Showfish but it’s also easy to make at home! It’s the perfect drink to impress your friends during a virtual Cinco de Mayo party. To begin, take a bottle of quality Blanco Tequila and place 1 Jalapeño + 2 Habaneros (or 3 Jalapeños) sliced into the bottle. Let this sit for 25 minutes and immediately strain out the peppers and any seeds.
Pro tip: Tequila cocktails can easily get weighed down by mixers and sweeteners but we like to keep them light and refreshing so the complex flavors shine through. At Gurney’s Star Island, we like to use light blue agave mixed 1:1:1 with agave syrup and warm water, it incorporates perfectly and gives a ‘never too sweet’ base to work from for all your favorite tequila drinks.
Recipe:
1.5oz Blanco infused pepper tequila
.5oz Reposado tequila
.5oz Fresh lime
.5oz Agave mixture
2 Fresh Strawberries (green tops cut off)
*garnish with Aleppo pepper/kosher salt rim
Instructions:
Take a lime wedge and coat 1/3 of the rim (about ½ inch deep) of your glass & dip it into your salt/spice.��(We love the half-dipped rim as seen in the photo)
Muddle strawberries in your mixing tin, add the rest of your ingredients with ice to the tin.
Shake and then strain over fresh ice into your rimmed glass.

Financial Assistance Summary
Here we go! This is our best attempt at summarizing what we understand about the current SBA loan programs. Just keep in mind, as much as we want to help small businesses access financial assistance, we want to be very clear that we aren’t banking experts at all, and we want to stress that you should contact your financial institution and/or your accountant for professional advice on how to proceed.
These SBA loans are administered by institutions that are approved by the SBA. Contact your banking institution first to see if they administer SBA loans. You will apply online, but with an individual financial institution, not the SBA directly.
SOME OF THE BENEFITS TO BUSINESSES FOUND IN THE CARES ACT:
1) The Paycheck Protection Program (PPP), (part of the 7(a) Loan Expansion):
The purpose of this loan program is to help businesses retain their employees at current compensation levels with low-interest - and potentially forgivable - SBA loans that they can use to cover payroll costs for their workforce as well as other operational costs such as rent, interest on mortgage obligations and utilities.
Sole proprietors and independent contractors are eligible to apply for these loans as ‘self-employed individuals’.
Sole proprietors would use IRS filings and Profit and Loss statements to support their eligibility claims. The interest rate for a covered loan is not to exceed 4%. You can apply for forgiveness on the loan in an amount that is equal to the amount spent during an 8-week period after the origination date of the loan on eligible expenses.
2) SBA Express Loan - Repayable Loan:
Eligible businesses can be granted up to $350,000 of capital in the form of either a term loan or line of credit. Fast turnaround time for an approval. The interest rate is negotiated but cannot exceed the SBA maximum.
3) Emergency Economic Injury Disaster Loans (EIDL) - Repayable Loan:
The Act expands eligibility for access to Economic Injury Disaster Loans (EIDL) to include any individual operating as a sole proprietor or an independent contractor during the covered period (January 31, 2020 to December 31, 2020). The Act requires that for any SBA EIDL loans made in response to COVID-19 before December 31, 2020, the SBA shall waive any personal guarantee on advances and loans below $200,000, the requirement that an applicant needs to have been in business for the 1-year period before the disaster, and the ‘credit elsewhere’ requirement.
4) Deferment of Employer Payroll Taxes:
This provision of the Act allows employers to defer payment of the employer-share of Social Security and Medicare taxes due from March 27 to December 31, 2020. Half of the tax will be due Dec. 31, 2021 and the other half will not be due until Dec. 31, 2022. (This doesn’t apply to the amounts withheld from employees).
This benefit also applies to self-employed individuals, allowing them to defer half of their self-employment tax on the same schedule. However, if you have had debt forgiven under either the PPP or the US Treasury Program Mgt. Authority, you are excluded from this deferment.
5) Emergency Grant Payment Distributions:
These grants allow an eligible entity who has applied for an EIDL loan, due to COVID-19, to request an advance on that loan, of not more than $10,000, which the SBA must distribute within three days. Applicants shall not be required to repay advance payments, even if subsequently denied for an EIDL loan. Advance payment may be used for providing paid sick leave to employees, maintaining payroll, meeting increased costs to obtain materials, making rent or mortgage payments, and repaying obligations that cannot be met due to revenue losses. Further, the Act requires that an advance payment be considered when determining loan forgiveness, if the applicant transfers into a loan made under SBA’s Paycheck Protection Program. (In other words, we think that if you get this $10K advance, that it reduces your PPP grant by the same amount.)
6) Multiple Modifications to the Tax Cuts and Jobs Act (TCJA) enacted in late 2017:
There are important tax changes in the CARES Act that could possibly affect your business, and we have included a link to our auditor’s website that addresses these modifications which can get you started in a review that you would continue with your tax preparer. Suffice to say that these changes may potentially allow you to receive a refund of taxes paid in previous years.
7) Employee Retention Credits:
If you have employees, the CARES Act provides for a refundable credit against payroll taxes for 50% of wages paid from March 13, 2020, to December 31, 2020, up to $10,000 per employee if the employer has a quarter that falls 50% or less in gross receipts below the same quarter last year.
8) FYI on Unemployment:
Here is a summary of some of the temporary changes to unemployment insurance enacted through the Act. A temporary Pandemic Unemployment Assistance program was established through December 31, 2020, to provide payment to those not traditionally eligible for unemployment benefits (self-employed, independent contractors, those with limited work history and others) who are unable to work as a direct result of the coronavirus public health emergency.
We do not, at the current time, know how a self-employed individual would provide documentation on employment.
The Act provides for an additional $600 per week payment to each recipient of unemployment insurance or Pandemic Unemployment Assistance for up to four months - in addition to state unemployment compensation and irrespective of how much the laid off employee is making when they were laid off. It also provides an additional 13 weeks of unemployment benefits through December 31, 2020, to help those who remain unemployed after weeks of state unemployment benefits are no longer available.
APPLYING FOR AN SBA LOAN
PPP loans will be made by SBA-approved lenders, like a bank, and you will apply directly to them. SBA is expected to issue guidance to lenders, including details on how to apply and the criteria SBA will use to determine who will receive loans by April 11 (15 days from signing of the Act), although it may be issued sooner.
Because there is going to be an avalanche of businesses applying for these loans, you should start assembling documentation now to expedite the application process. This is not a comprehensive list, but we suggest getting these items together now so you are ready to apply. Be sure to have all documents in a digital format. All of these documents may not be requested.
Since these loans are SBA 7(a) loans, the forms that you will have to fill out will be similar to SBA Form 1919, so review that form at this time;
Articles of incorporation/organization;
Bylaws/operating agreement;
Documentation verifying payments on mortgage obligations, lease payments and utility payments;
Payroll expense verification documents, including IRS Forms 941 and 944, payroll summary reports and bank statements, summary of payroll benefits;
Trailing twelve-month profit and loss statement, and complete 2019 financials (P&L and Balance Sheet);
Utility statements;
Most recent IRS Form 941 (quarterly Federal Income tax return);
January 2019 through February 2020 payroll expenses;
You may need your business license;
Prior year taxes, if they are complete. If 2019 taxes are not complete, then have 2018 taxes ready in a digital format.

The Mister Green Smoothie
Alison Burke yoga instructor, is also an owner of the Hamptons based health food cafe Simply Sublime. She shared this super healing green smoothie recipe with us called Mr Green. Perfect when we’re all stuck at home, possibly not feeling our best.
Makes 1 Serving (Use organic if possible)⠀⠀ ⠀⠀⠀ 1/4 banana handful baby spinach a few stems of parsley with leaves 2 leaves fresh basil 2 tsp chia seeds 1 cup ice 8 oz pineapple juice (for thinner use coconut water, for creamier/reduced sugar option use unsweetened almond milk) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Combine all ingredients in a blender until smooth, adjusting liquids as needed and enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Optional add-ins: thumbnail-size piece of fresh ginger root or turmeric to help combat inflammation, one tablespoon nut butter to up the protein and healthy fat, a handful fresh or frozen berries to up the fiber and antioxidants.

Four Methods for Feeling Better
We talked to local therapist Nella Hahn for some really great tips on how to stay calm during a pandemic. We’re going to take all of her advice to heart, read on for her tips...
Experiencing disruption to our daily living routines can be stressful and overwhelming. But dealing with a pandemic of volatile complexity can create a substantially more challenging experience, especially if you have difficulty navigating change, as many of us do. Between sheltering in place, incessant news reports, and unknown futures, it’s no surprise some of us have begun to experience anxiety and depression.
But the bright side is, no matter how out of control it feels, you do have some control. There are simple actions you can take to make the COVID-19 pandemic more tolerable. If you clear your head and view these methods as the simple challenges they are, you will come through this stronger and healthier in the long run.
THE FOUR METHODS
1. Create a routine or daily schedule to keep you on track. Get out of bed, shower, and dress - even if your attire is super casual. Just don’t stay in your pajamas all day long.
2. Create an exercise regimen if you don’t already have one. Stretch, breathe, lift light weights or just get your heart rate up by running up and down the stairs, in place, or around your yard. It doesn’t matter what you do as long as you do something daily. Consider adding meditation to the mix too, it will help clear your mind.
3. Take in some fresh air. Open your curtains and windows to bring in sunshine and fresh air, and if you’re lucky enough to have a yard or a place to walk while maintaining social distance try to get out there daily.
4. Limit TV newscasts. Staying glued to the sensationalist and doomsday news channels isn’t good for people on a regular day, so it can be detrimental during a crisis. Consider signing up for a morning news email then letting that be it for the day. We like The Skimm, Tag the Flag and the New York Times. They take about 5 minutes to read, then you can feel informed and get on with your day without the compulsion to turn on the tv news.
While you’re unable to control the path of a virus, you can keep yourself physically prepared. Preparation informs us how to proceed through clarity and calm, while obliterating many negative feelings. Every day is a new beginning.

Cooking Beautifully During a Quarantine
Cooking during lockdown can be therapeutic and comforting, but it can also be super stressful dealing with substitutes, expiration dates, and not wanting to let any scraps go to waste. Our favorite way to deal with the stressors involved with shopping and meal planning in a situation like this is to keep things flexible, and to plan for delicious leftovers. This is less of a recipe, and more of a loose idea to follow to create a few days of simple meals that can be pulled from one flexible grouping of foods.
A GROUPING OF FOODS: See if you can track down these three things...
1. Some sort of poultry (a whole bird, parts, boneless breasts, even a pork tenderloin works as a substitute!) 2. Potatoes (baking, red, sweet, fingerling, whatever you can find!) 3. Roasting veggies (broccoli, onion, asparagus, peppers, zucchini, cauliflower, whatever you can find that will roast on a cookie sheet)
NIGHT ONE: 1. Cut up your potatoes into bite sized pieces, add some onion if you have it, toss with olive oil, salt and pepper, place your meat top and center, brush with oil and maybe some spices or herbs, whatever you have, and roast.
2. Cut up your roasting veggies, toss with olive oil, maybe some parmesan or spices, and roast on a sheet pan till tender.
NIGHT 2: 1. Chop up your leftover veggies and meat (save the potatoes for tomorrow) and toss with cooked pasta, you can just drizzle some olive oil, lemon or balsamic glaze, sprinkle some cheese, or you can go all out with a hearty cream sauce (fresh or canned, either is fine!) Eat it out of the skillet or bake in the oven with bread crumbs and/or parmesan. This one might even last 2 days if you stretch it!
NIGHT 3:
Those roasted potatoes are the perfect base for ‘breakfast for dinner’ pop them in the oven or toaster oven until sizzling and brown, serve with eggs, or pancakes, or bacon, or sausage, a strata, or frittata, whatever you can find!
And there you go, three nights of good food during lockdown.

THE 3 ESSENTIALS OF TRANSITIONING TO FALL
Fall is the time of year when interiors need to transition to a warmer, cozier feeling. Shannon Willey from Sea Green Designs in Southampton gives us the only three words we need to keep in mind when sprucing up for Fall.
TEXTURE
Blankets and pillows are the definition of cozy. In the summer we like cottons and canvas but in the fall it’s time to swap those cool fabrics out for some texture. Grab a few throw blankets and pillows in mohair and soft spun wools and you’ve just made Autumn magic happen in the blink of an eye.
COLOR
Choose your textured accessories in deeper hues that compliment your existing decor. A big mistake is switching right over to orange accessories because pumpkins are orange. If your summer decor is watery greens and blues, choose your textured fall pieces in deep aqua, teal and navy. The whole thing will feel more seamless and less forced.
FIRE
As the days get shorter, and chillier, it's also a great time to break out the candles to create a warm glow. Cluster pillars in a fireplace, on mantels and on a coffee table. Smaller candles look perfect lined up along the center of the dining table.

YOUR 2020 EAST END WEDDING, SIMPLIFIED
Congrats on your engagement! It’s one thing to know that you want a wedding on the East End of Long Island, and another thing entirely to know how to pull it off successfully. Here are a few tips that should set you off in the right direction...
DECISIONS, DECISIONS: NORTH FORK VS SOUTH FORK The vibes on the two forks couldn’t be more different, but they remain equally desirable and beautiful. The South Fork is home to your traditional Hamptons weddings; ocean beach ceremonies under canopies of flowers, big rolling estate lawns, white vintage Rolls Royces and white hydrangea everywhere.
Then the North Fork has its own unique vibe, sort of a rosé infused, organic lavender farm, vintage pickup truck, chalkboard vibe. It’s country-chic at its finest. This article from Brides Magazine will give you the gist.
TIMING
Although it’s typically recommended to start planning 12 - 18 months in advance, in a pinch, you can pull off a nice East End wedding in 6-9. You will likely need to make some compromises on the details because certain vendors and venues might be booked, but don’t be discouraged, it’s still possible you’ll find another you love just as much because there are just so many resources to pull from. I planned my own October Hamptons wedding in 9 months and it was so memorable. This article from The Knot will help you pick the time of year that suits you best.
If you’re in a time crunch and you’re feeling the Hamptons vibe, a pro-tip is to go with a venue that can handle food, accommodations, rentals, cakes and more. This keeps the planning streamlined and you end up paying less for a venue when the food & beverage is part of the same package (it’s like having a party in a restaurant as opposed to renting a venue and hiring a caterer). Gurneys resorts (now there are 2, OG on the ocean and the Yacht Club down the road) does just this. This is the only case in which I’d recommend you reach out to the venue first. They have their own planners onsite (their staff is extraordinarily accommodating and professional) and they can recommend off premises vendors for any missing pieces that they don’t provide (such as floral, where they will recommend local vendors such as Sag Harbor Florist) In all other cases we recommend you reach out to a good planner first.
NORTH FORK WEDDINGS
So you’ve decided the country vibe of the North Fork is your jam. Now is the time to reach out to a wedding planner that specializes in events on the North Fork such as Ashley O’Neil. She will listen to your vision and time frame goals and guide you every step of the way. You’ll have all different types of venues (waterfront, farm, winery, estate) to pick from, gorgeous decor choices, incredible food such as Lombardis Love Lane Market and so much more. Once you get your dates and your planner set, you are on your way. Congratulations!
SOUTH FORK WEDDINGS
The same goes for your Hamptons wedding, come up with a general idea of what your timeline is and the vibe you’re looking for and find a planner that can make the magic happen, such as Jill Gordon and she will guide you in the right direction. We recommend checking out venues such as Baker House 1650 and The Inn At Windmill Lane where you get a grand vibe and beautiful onsite suites for your guests, or Hampton Maid for a charming ‘home away from home’ feel with a variety of beautiful rooms and suites with incredible onsite breakfast. Also consider The Parrish Art Museum and the ocean beaches for that quintessential Hamptons vibe. But always defer to your planner, they will make all the best recommendations for you.
DETAILS
Sometimes just a couple of creative details that really speak to your sensibilities can make all the difference. For a cool chic vintage vibe check out Bubbles and Brews Prosecco Vans, they will even keg your favorite spirit such as an old fashioned or martini. Open fire cooking such as Panoram Argentinian Asado or Homeslice Pizza add a very cool vibe to your reception, and the smell of the open fire grilling can’t be beat. For chic mobile lounges, glamping tents and fire pits check out Terra Glamping. Maybe the vibrant floral design of Lilee Fell is your thing, or maybe it’s the chalkboard art of Kara Hoblin. Whatever it is that makes your soul happy, that’s what you should splurge on. This is your day.
BUDGET
It’s easy to spend upwards of $100k when planning the perfect East End wedding. The best venues alone can start at $20k+, food can easily be $200+ per person and that doesn’t account for rentals, lodging, photography/video, floral and decor. But, that doesn’t mean you can’t call a planner with half that budget and end end up with something beautiful. Let them lead the way, consider off-peak times and other ways to save. Even further down the frugal line you can pull off a simple ceremony at a town hall or outdoors and a reception at a great local restaurant such as Cowfish for less than 100 people and come in at around $10k (if you’re a little creative and lot frugal) And if you don’t register for gifts, you’ll end up with mostly cash, which you can put toward the wedding costs and whoosh... you break even! That’s what I personally did and I don’t regret it for a second. You just need to make sure that you’re spending smartly, splurging on the things that matter most to you, and you’re making the memories that you want to last a lifetime. Also, don’t cheap out on photos and video, you’ll regret it forever.

For those of us who live in the Hamptons year round, it’s so easy to get entrenched in our routines, working hard, and slightly resenting the visitors who seem to be so carefree. We often feel like we need to go far away, for a long vacation to recuperate and energize, but what’s so amazing about living here is that we have access to the ultimate staycations if we play our cards right. Here are some insider tips on how to make a Hamptons staycation just as effective as a vacation away...
SPLURGE FOR THE HOTEL: Mistake #1 is foregoing a hotel because it seems silly to pay to stay someplace a drive away from home. DO IT! You will feel like you’re a lifetime away from home if you pick someplace special and new. You’ll get over the silliness factor quickly once you check-in, grab a cocktail with a gorgeous view, and catch that feeling of ‘nothing to do’. Ahhhhh...

PICK THE RIGHT VILLAGE: If you live in Quogue, head out to Montauk or to Greenport. If you live in East Hampton, pick Westhampton Beach. Get out of your regular zone. MAKE IT A LONG WEEKEND: Take an extra day, be it Friday or Monday. That one extra day doesn’t dip hard into your stash of vacation days at work, but it really does make a huge difference when you’re taking a recharge weekend.
YES RESERVATIONS: Don’t plan to ‘play it by ear’, that’s exactly how to fall back into a rut of waiting till the last second and going to the same places you always go to. That’s the opposite of what a staycation is supposed to be. Make some reservations at those spas and special restaurants, buy some tickets to a show at Guild Hall, Bay Street or WHBPAC. Make MORE reservations than you would if you went away to a new place, because there, everything is new, on a staycation you need to be selective about what will create new memories, and what will just feel like ‘just another day at home’.

UNPLUG: Put that ‘Out Of Office’ notification on your email, turn the damn thing off, and don’t bring your laptop to the hotel. Everyone deserves some real downtime, even on a staycation. And if you see your boss or clients while you’re out enjoying yourself, either do the old ‘duck and hide’ or just tell them you’re officially ‘on staycation’ and can’t talk about work (we prefer the old ‘duck and hide’ though). Pro-tip: Consider buying a little digital camera so you can still take selfies without your phone, or just put it on airplane mode. Whatever your method, just put it away and live in the moment.
SHOP LOCAL: The villages this time of year are unbeatable. No crowds, lots of beautiful local shops all stocked up, amazing sales, and everyone is happy because they found a parking spot, and they have room to breathe, and life is good. Be sure to hit the independently owned shops, that’s how to support the community in a real grassroots way.

Get out there and spend, eat, drink, party, sleep in, and treat yo-self for a few days. If you live in the Hamptons year round, you definitely deserve it.
