To me, Spirk has always been canon even in TOS. Edith Keeler, Trelane, Gem, Sargon, the Metrons, and many others spoke of their relationship. Spock held Kirk's hand in Turnabout Intruder.
Kirk called Spock the most noble part of himself in ST:III
Roddenbery created the th'y'la bond in the novelization of The Motion Picture. Etc.
But what makes Unification so important is the last few years, between Abrams films and straight SNW, the powers that be (including Shatners own PR team) have tried to take away from the K/S part of Star Trek and made both characters super straight and Kirk macho. Furthermore, they exiled Kirk and Spock to different universes from each other.
Unification with the Kirk we know, who always loves flowers when planetside, touching flowers , and its incredible softness and love between our heroes, helps to heal some of what's been lost.
And of course, it gives the most romantic couple of all times, their happily ever in eternity as Thelassa and Sargon spoke of.
