Hearty Vegan Lentil Chili by NappyHeadVegan

I recently decided to try my own lentil chili recipe. We really enjoyed it. I like to pair my chili with a little brown rice and homemade cornbread. All vegan. Try out this recipe and make it your own!

Ingredients

1 (16 ounce) package brown or green lentils 1 lb diced tomatoes (no salt added) 2 (6 ounce) cans of tomato paste 3 cups water 1 red bell pepper diced 2 celery stalks diced 2 jalapeño peppers chopped 1/3 cup chili powder 1/4 cup curry powder 2 tbps cumin 1/4 cup Bragg’s Liquid Aminos

Instructions

Rinse and boil lentils for 40 minutes. Drain water from lentils after cooking. Add tomatoes, paste, water, bell pepper, celery, and jalapeños. Stir and let cook on low for 15 mins, covered. Add spices and Bragg’s. Stir. Let simmer for 10 mins. Let cool and serve.

This is the huge stash of vinyl that was just sitting at one of my venues.  They didn’t know what to do with the stuff, so one of the volunteer coordinators told me that they needed it gone.  Since my wife is a huge vinyl junkie, I said “sure”! 

We got it home, and started digging.  It’s obvious that some of the musicians there had their way with it, but there were some VERY interesting surprises inside…VERY.
