My love affair with avocado is sadly one-sided. I love it, and it just doesn’t reciprocate my feelings! I buy one every ten days. Carefully wrap it in the paper. Check on it thrice a day. And one day, when it looks okay, I open it to find it’s still hard, or worse..overripe! Yesterday was one of those days. But I was adamant not to waste it, so it got smashed and went into a brownie batter to make the most decadent Fudgy Avocado Brownies!

These Vegan Chocolate Almond Butter Cups are surprisingly easy to make and absolutely delightful in taste..take my word on this.I filled my chocolates with homemade almond butter (  definitely more of this next time) and a teeny bit of raspberry jam to make almond-jelly cups. These were topped with chopped almonds, cocoa nibs, and sea salt. It looks like I’m on a “mini dessert” trip! and today these absolutely indulgent, fingerlickin’ good, mini-sized Dark Chocolate Caramel Tarts. they are simply gorgeous, velvety bites of buttery chocolate crust filled with the golden salted caramel, luscious dark 70% chocolate and finished off with sea salt for the perfect balance and to bring out the intensity! Also because I don’t have enough adjectives to describe them.

Aam ki Launji - We Indians love our chutneys and pickles. Unfortunately, I’m not much of a pickle person. Though I do love the winter special cauliflower, turnip and carrot pickle. That too made by my mom as she knows I can’t handle hot and spicy foods well.

This is a really a substantial stew with abundance of vegetables in a flavourful, gently spiced tomato based curry. Rich in protein, complex carbohydrates, fiber and vitamins. You can serve this as is or with rice, couscous, quinoa, millets or with just a hunk of good bread to mop up all the delicious curry! My son loves it with paranthas too.

Besan cheela/ pooda or chickpea flour pancakes are a popular weekend brunch around here. though i have to say, my mother-in-law was an authority on them. this time around, i tried to get as close i could to her recipe, but with the addition of amazing purslane or kulfa ka saag.
