// GINGER & MINT PORK MEAT BALLS W GINGER BROTH & UDON NOODLES // Serves 4
Meatballs 500 Pork mince 2 tablespoons, grated fresh ginger (not from a jar) 2 garlic cloves, grated 1 big handful of mint, sliced thinly 1 teaspoon light soy 1 teaspoon sweet soy 1 teaspoon sesame oil (Optional 1/4 red chilli, diced) + Combine all ingredients above and roll into small meatballs. + Fry in a pan with a little olive oil until golden and cooked all the way through, set aside. Broth 1L Broth, store bought or homemade. (If you cant get broth, then good quality stock will also work) 5 Slices fresh ginger 240g Udon Noodles + Bring to the boil to bring out ginger flavours and reduce to a light simmer + Add udon Noodles to broth, they will only take 2 minutes max to cook. Serving + Divide noodles between bowls, top with remaining broth. Finish with meatballs and top with fresh mint, chilli and spring onion if you please. Enjoy! T&C x
