I think that by now, you have noticed my infinite love for oatmeals. I eat porridge almost every day (except Sundays) and I can´t get enough of them.
The base is always the same - oats, water (sometimes plant-based milk), chia seeds, hemp seeds, sunflower and pumpkin seeds, nuts (usually almonds, walnuts, cashews), peanut butter, and cocoa. Sometimes I like to add shredded coconut, cranberries, or dates.
The fruit on top varies all the time but banana is almost never missing.
So here is a post to commemorate my beloved oatmeal :)

Recipe 😋
Tomato and Garlic pasta 🍝
Ingredients:
160g of spaghetti
6 ripe vine or roma tomatoes, peeled and roughly chopped
1 small onion, finely chopped
2-3 cloves of garlic, crushed
Little vegetable stock
Splash of red wine vinegar
Salt and black pepper
Spray oil
Freshly chopped Italian parsley or basil
Method:
Spray a frying pan with some spray oil over a medium-high heat.
Add the onion and fry for 3-4 mins. Then add a little stock and continue to fry until softened and translucent.
Add the garlic and fry for a further 2 mins.
Add the tomatoes, a splash of red wine vinegar and a little bit of stock and simmer away, stirring every now and then until the tomatoes break down and become more sauce like.
While the tomatoes are cooking, you can cook the spaghetti according to package instructions.
When the sauce is ready, add the spaghetti to the sauce and toss to coat. Season with salt and black pepper, and a sprinkle of fresh chopped Italian parsley.
Serve with a side salad or your favourite vegetables

Light Strawberry Banana Ice Cream
Serving size 1 cup
Ingredients
2 bananas, sliced and frozen
½ cup strawberries, frozen
2 tablespoons heavy cream
½ teaspoon vanilla
Instructions
· Place all of the ingredients in a food processor and blend until smooth. The consistency should be like soft serve ice cream.
· Transfer to a freezer safe container large enough to hold 2 cups, and freeze for at least 3 hours.
· Scoop with an ice cream scoop and serve cold.
