Had enchiladas (basic, just ok) and also elote tonight, was my first time making or honestly ever really eating that tbh and I think it turned out pretty yummy
#I had a disproportionate amount of the Mayo cheese mixture to corn so I just kinda threw it all in the cast iron#which led to a sauce we could kinda pile on there as evidenced by my bf’s plate#my food
