I made this super cute cake for my baby nephew's first birthday. 

It’s a moist cereal butter cake with strawberry jam and cereal buttercream with more fruit loops sticks on the cake.

Pavlova. I'm struggling with this at the moment. This is the most trickiest and difficult dessert ever to make. Every time making this it ends up with very different outcome. From the methods to shaping and even the temperature and level of placing it makes a whole lot of different. My goals is to make this baby no crack and in the perfect shape and height and I ain't givin' up 'til I get this right even if it's gonna take forever.

It’s a gooey-ooey mousse like texture on top of a fudgy chocolate cake. Screaming all chocolate lovers.

Virgin Strawberry Mojito.

My first alcoholic drink inspired cake. This is a non-alcoholic cake. What I love most about this cake is that it has beautiful pastel pink decorations with dried lime slices, and the cross-sections, of the strawberry jelly.

This cake consists of a soft vanilla sponge cake, lime curd cream cheese filling with bits of strawberry jelly and semi-frosted with swiss meringue buttercream, decorated with dried lime slices.

Cake Contributions at my previous workplace.

1. Blueberry-Lime Yogurt Cake

A fruity cake that consists of a soft blueberry sponge cake, lime curd cream cheese filling, blueberry compote and semi frosted with swiss meringue buttercream.

2. Cendol Cake

Cendol is an iced sweet dessert that contains droplets of worm-like green rice flour jelly, coconut milk and palm sugar syrups. It’s a local favourite.

Decided to turn it into a cake form. It consists of a soft coconut sponge cake with coconut milk pastry cream with the green rice flour jelly and palm sugar bits. Semi-frosted with coconut swiss meringue buttercream. This one is a crowd-pleaser.

3. Hazelnut Caramel Latte Cake

My favourite latte would definitely be Hazelnut Caramel Latte, so why not turn to a cake form.

This cake consists of soft vanilla sponge cake, caramel filling, sprinkled with a generous amount of hazelnut praline crumbs and fully frost with coffee swiss meringue.

Three of my favourite things to eat and a combination of all 3 is like heaven in my mouth. A scrumptious layer of goodness.

Starts with digestives biscuits for the base, then Hawaiian coconut with bits of dark chocolate chips, dark chocolate ganache and lastly a generous amount of cornflakes crumbs.

LAMINGTON

A lamington is an Australian cake, made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut.

Lamington Layered Cake - with a little twist!

It’s a butter cake coated with chocolate sauce and Hawaiian coconut sandwiched with diplomat cream, raspberry jam, and milk crumbs.

Banoffee Cake

I’ve always loved the combination of banana and salted caramel combined. One day, I tried this super delicious banoffee cake near my house, so I thought why not replicate it with a little twist - milk crumbs and chocolate bits! 

It’s a banana layered cake filled with milk crumbs, chocolate bits, salted caramel and frosted with diplomat cream. Decorate it with salted caramel dripping, more milk crumbs, and chocolate bits. Heaven!

FRAISIER

Fraisier is a classic French Strawberry Cake.

Citrus Matcha Fraisier

It’s a two-layer matcha sponge cake with citrus infused creme Mousseline and fresh strawberries. Topped with vanilla cream frosting and dusted with matcha powder.

ENTREMET

Entremet is a multi-layered mousse based cake.

1. Chocolate Blueberry Entremet. 

From the bottom, chocolate moist cake, vanilla bavarian cream, blueberry caramel, blueberry mouse and blueberry glaze. Chocolate Blueberry goodness.

2. Chocolate Biscoff Entremet. From the bottom, chocolate moist cake, almond dacquoise, Nutella feuilletine, biscoff mousse, and chocolate glaze. Top with more biscoff crumbs.
