If you ask me which order, I find most fascinating, it is Zingiberales ever since my visit to the fabulous Halia garden of Singapore Botanical Gardens. Today the focus is Kasthoori Manjal aka Curcuma aromatica. In 1970s , Kasthoori Manjal used to account for 5% of all the curcuma family production in India. It is highly valued in South India for its aroma & cosmetic purposes. But unfortunately now it has become sort of a vanishing species and is often substituted with koova manja ( curcuma zedoaria) which grows wild. You can see the difference in pictures in the color itself from the commercially available powders and the actual rhizome which is a pale yellow. Even though Kasthoori Manjal is native to South & South East Asia, it is not used much in cooking because of its bitterness even though it is considered very beneficial to your digestive tract . Since it is so aromatic and has a camphor flavor, I used a small piece of it in the chammandi I made today with coconut , pori kadala ( roasted chana dal), vella kanthari ( white birds eye chillies ) & salt. It was quite nice to have it with dosas.
