Omg! How simple was this!! Just made my first vegan mayo. It is only oil and soy milk!! For flavor some lime juice and salt. I used my hand blender. 1 cup oil, 1/cup #soymilk is the recipe. I only made half the batch. About 2 dl oil.. I kept the blender on the bottom and still first until it started to emulsify. No need for expensive store bought stuff with weird ingredients. I tried this before with too little oil probably, cause I blended for ages and nothing happened. Of course it was unsweetened soy milk and they say it almost can't be done with other plant based milks.
