Heard of blonde chocolate? Like ruby chocolate, it's a fairly recent discovery and happened completely by chance when pastry chef Frédéric Bau left white chocolate in a bain-marie for hours. The result was a slow roasted chocolate with notes of shortbread and butterscotch. We recreated this happy accident in our blonde bar, delicately roasting our white chocolate for hours to create that signature golden colour and delicious buttery flavour.
