By far my FAVORITE chicken soup recipe. I personally do a few changes tho
1) i usually add more ginger
2) i exclusively use chicken thighs cuz that's the cheapest
3) I don't cook the noodles in the broth cuz that makes it harder to consume leftovers
4) I add a LOT more mushrooms/bok choy than the recipe calls for
5) I omit the jinhua ham cuz I can't find it anywhere and there was no significant flavor difference when using bacon so I omit that too
When I tell you this soup is insanely easy plus the most *chickeny* chicken soup I've *ever* had... even matzo ball soup (my beloved) doesn't hold a candle to this soup.
holyshit this looks banger i might try it w udon noodles i got somewhere. thankyou fuck yes and i gotta double down onto the 'dont cook noodles in the broth' bit because a long while ago i made a more classic american style chicken noodle soup with small egg noodles, put em in the entire soup and was sposed to only have em cook there for like 10 min at most. my ass obviously forgot bout it and nearly an hour later the soup was fucking mush. it was like i took a bunch of egg and flour and whisked it into the soup together. like if i fucked up egg drop soup cuz i used a fucking crepe batter. it tasted good but never again
