After an eight hour set, we have Champagne Jelly! I filled it with fresh peaches and red cherries. While I’m not going to start making aspics, I get why the Victorians+ we’re obsessed with molded food; it’s impressive looking and when the flavor is good, like this jelly, it’s fun to eat. Not to mention, with this particular recipe you get to show off your wealth with all the expensive ingredients glittering like jewels inside the jelly. So tonight we have Lamb Stew with Semolina. Another downstairs dish, although I can’t help but feel in a modern restaurant this would 100% be fine dining cuisine. Obviously, I’ve given it a modern plating. This is so yummy, and I’m probably going to play with semolina A LOT in the future. If polenta was made of wheat that’s what it most closely resembles. Also, this exact meal was mentioned in the show a few times. This is a recipe from Downstairs: Cauliflower Cheese. It’s basically a cheesy casserole. Very easy to replicate. I took Annie Gray’s advice and browned my cauliflower before combining with the béchamel and it’s LOVELY. While there isn’t a Sunday Roast recipe in this book I decided a nice Medium Rare roast to be a companion to my Cauliflower Cheese.
