top 10 Mexico moments
10. Getting my sobrina Ivanna in trouble with Chanis for telling her it was ok to use my tio’s doc appointment reminder as scrap paper to practice her lettering. (obviously explaining to my tio later it was my fault lmao)
9. El guerito smiling and knowingly saying “See you tomorrow” to my family because we came for tacos just about every night.
8. Mateo and his “bubujas” and ordering me around to make a lot of bubbles or bigger ones.
7. Solo bonding time with my cousin Dany while we got pajaretes and talked about life.
6. Google Translate Audio gooning back and forth with my primo Ernesto.
5. Driving around when the radio was off and starting to sing Nunca Suficiente quietly to self; my primo Ernesto singing the next line; other primo Alejandro singing next line; tio Pancho singing the next line all for us to join in for the last bit.
4. La tienda shopkeeper across the street not knowing my name but that I’m a creature of habit, and telling my prima exactly what drink “la guerita” gets all the time.
3. Abuelita bragging to anyone that walked by that she was teaching me how to make sopa de fideo her way as we cooked.
2. Abuelito making sure his whole day was cleared on the day I was leaving though my annoying primo was trying (forcingly) to make plans with him -- insisting he needed to be home.
1. Abuelita crying after I kissed her pinky to make it feel better and telling me how sweet I am, and me crying because she’s crying.

Photos from April 4, 2018
These two days were the start of the second half of our bike journey. One we originally thought would only take us a week, ended up taking us fifteen days. We took a day of rest in Guatemala City at Sarah’s apartment, not quite escaping the daunting feeling of having to get back on the bikes the next day for what was to be another entire week. Starting out in the city, we rode north following the track slowly emerging from the chaotic bustle of the markets and endless traffic. Our first stop was the massive bridge called Puente las Vacas (The Cow Bridge).
I didn’t take any photos here because it was already my third visit to the bridge. It’s the one I’d done the death drop precision underneath, probably one of the things I’ve done with the most consequence although it wasn’t too scary at all. Anyhow, we walked our bikes across this first major point as Sarah filmed a few clips for our video project. One curious part about this was that we came from the side of the bridge we hadn’t yet been to. Underneath one section of the bridge (the north side, I believe) is a huge area with slums and is generally an unsafe area to be, so we were eager to get across without spending too much time in the open with our bikes and camera gear.
Once we crossed to the other side we stopped near this mall area to grab some lunch before making our way to the next bridge of the day, the Puente El Fiscal. This was the first bridge I’d been to in Guate and the one I did the rail balancing underneath. It looked so different in the middle of the day compared to when we’d first gone there at sunrise. Being there made me realize just how long I’d been in Guatemala as six months had already passed since the first visit there.
The other part of this day I remember is a very long, yet busy downhill stretch where I was constantly braking in fear of losing control and smashing into the constant stream of semi’s to my left. Sarah had been in front of me for ages and I was just hoping I’d eventually catch up to her as I probably hadn’t seen her for nearly an hour. Eventually we reunited and we made our way to the final area, where the railroad diverged from the highway. We followed what turned into a dirt path through the tall grasses in the middle of nowhere for maybe half an hour before we reached a clearing where we encountered the bridge in the first photo.
The area was completely quiet and deserted and as the sun was going down we figured it’d be the perfect spot to camp for the night. The bridge had been subject to loads of vandalism - many people had cut down entire sections of it for scrap metal and wood. All that was left is what you can see, just half of what it used to be. Only the middle remained while the ends had been removed. I was in awe of what it must have taken to accomplish such a task, especially with minimal tools available. The people who lived in the area must have been really desperate to go to such lengths for the materials. Why couldn’t the society they lived in provide enough that they didn’t feel the need to manage such a grisly ordeal? My mind felt heavy with the weight of the thought.
The night turned out to be peaceful, besides waking up to a swarm of ants crawling all over us. We were more than ready to continue on after that abrupt awakening. This morning turned out to be one of the most difficult, as we ended up getting lost and having to cut through a cement plant to get back to the highway. This was one of the more frustrating consequences of trying to follow the tracks to a tee, but it surely proved to be the more adventurous route. A guy that we’d talked to told us we wouldn’t be able to get through because the area was guarded, but we’d already come so far off the highway that we decided to press on. This choice meant that we had to cross a small river with the bikes, haul them over a barbed wire fence and then onto the road in the cement plant. Of course we immediately ran into the workers and guards who told us we weren’t allowed to cross through to the highway. Sarah really let them have it in Spanish and explained how we were out of water and food and just needed to cross through. Magically she was able to convince them and we were able to pass.
The last occurrence of that day was crossing through another area we’d gone back in October. We managed to find the same small tienda we got beer at after walking four hours down the tracks. I was surprised that the people there still remembered us! We of course got another couple beers there, while catching up and telling them about our journey. These people were some of the friendliest, and the photo above is us in the tienda with the owner. We continued on in search of our next place to sleep for the night.

Adobo A-Go-Go
Tumblr media
Black bean burrito waiting for adobo  Photo by Donna Campbell
At a friend’s milestone birthday party a few weeks ago, the supper spread was what we’ve come to expect from the inveterate party-givers L.A. and Trip Renn. These two Georgia-born gourmands are always ready to party at their handsome house in the woods outside Carrboro, no matter the occasion. Case-in-point: They host an oyster roast every December that involves bushels of fresh North Carolina bivalves slowly pried open by intense heat and wild spirals of fragrant hickory smoke. Once shucked, the oysters are decorated with generous shakes of Trip's coveted Orange County Red--a quasi-mignonette sauce that's been heavily influenced by his love of New Orleans cuisine. A mix tape of the same flavors—Zydeco, Jazz, Blues, and Allman-era rock--always accompanies these comestibles.
For the October birthday, the dining table was covered with picnic food—two-bite ham, havarti, and cranberry sandwiches; dumplings, both steamed and fried; smoked bluefish that Trip had caught at the coast a few days before; bubbly artichoke and cheese dip with baguette slices; and an ample plate of deviled eggs. Sighting the latter, I did a double take. Stuffed in the hard-boiled whites, the yoke mixture had a pinkish cast. I snatched one immediately and took a bite and found the unmistakable flavor of wood smoke and fiery peppers amid the pickle and mayo. A happy surprise.
“It’s Trip’s adobo,” L.A. said, catching me examining the half eaten half. She then walked me toward the fridge. There, on a shelf at eye level, a quart jar glowed a brilliant red among random bottles of Modelo, Dos Equis, and other cooling quaffs. The adobo was thickish, dappled with white seeds, and not much liquid evident. "I put it in cornbread, pimiento cheese, soups, and mix it with sour cream for a dip," L.A. said, shaking and shimmying at the delightful thought of these dishes. (L.A. wears spectacles that match the color of the adobo.)
As I soon learned, the peppers in this recipe were a variety of jalapenos that easily ripen to a bold red and have a very meaty interior, plump with sweetness, and variable by crop in degree of heat. "I started growing them in the garden because the deer don't like them, they tolerate drought, and they’re prolific," Trip told me later, "but this year's crop was not so good. I need to make some more."
We jumped right on it. Donna and I went to the Carrboro Farmers Market and bought a couple sacks of Concho Jalapenos from Mike Perry of Periwinkle Farm in northern Chatham County. Mike, a talented brick mason, worked with Trip in the construction business years ago, and he grinned when we told him of our mission.
According to The Oxford Companion to Food, adobo "is a culinary term of the Phillipines which usually refers to pork, or chicken and pork, stewed with vinegar, bay leaf, peppercorns, garlic, and soy sauce until brown and aromatic."  But the word adobo is actually Spanish, and you are likely to find something called adobo in any Mexican tienda--a mixture of ground chiles, spices and herbs that are made into a paste by adding vinegar and/or oil. It’s used as a meat marinade. On a Mexican restaurant's menu, you may also find a dish called adobo--usually pork--that has been flavored with this paste. So adobo is both a marinade and a dish made with the marinade.
In Trip Renn's lexicon, however, adobo is something to add to any dish "when you want a little spice."
He can't remember where he got the idea to use fresh peppers (instead of dried chiles) to make his adobo, and of course, smoke-dried jalapenos are called chipotle peppers, so Trip's concoction is sort of a chipotle adobo, but the chiles in this recipe are not allowed to dry out. Trip stops short of evaporating all the juices in the smoking process, and then he chops the still moist peppers in a blender, adding apple cider vinegar. Trip is convinced the vinegar makes this condiment safe for consumption for a number of weeks in the fridge. "It's pretty bug proof," he says. The finished product, incidentally, looks more like relish than paste.
We gathered one weekday afternoon in Trip’s woodworking shop. He pulled out a well-used barrel smoker. As we began, he asked me if I thought the lid still smelled of the blue fish he'd smoked a week before. I stuck my nose in and shook my head. Satisfied, Trip loaded the firebox with a scrap of oak flooring, some dried prunings from his apple trees, and a few shavings of well-seasoned western red cedar to serve as starter. The cedar he said, would burn up quickly and not flavor the peppers.
Once the apple twigs caught fire, Trip threw in some brick-sized pieces of hickory, also harvested from the nearby woods. He noted that a friend had recently tried smoking something with persimmon wood to poor effect. He prefers apple. A pan of water was suspended above the firebox, and the peppers were laid out on the third tier, just under the lid. Unlike when smoking meat, no temperature monitoring was necessary. Trip did issue one word of caution, however. Even if the smoke makes you want to, don’t rub your eyes after you've handled the fresh peppers!
The beauty of Trip’s adobo is that everyone can add a touch to a meal in proportion to their personal tolerance for heat and smoke. A teaspoon or so of this batch, made with Mike Perry's peppers, went a long way in terms of the burn. In a couple weeks’ time, we've consumed many a spoonful with breakfast, lunch, and dinner. Added to grits, the adobo made me feel like I was sitting by an early morning campfire instead of my dining room table. Washed down with delicious coffee, it added a little happy dynamite to the day.
Thanks to Donna Campbell for this joyfully edited video of Trip's process, and thanks to Trip and L.A. Renn, who could have their own food show.
