Ok I'm sorry for bothering you on my own post BUT as a resident strawberry lover in the midst of my local strawberry season, climate and season have a very strong impact on strawberry flavor!
If your strawberries are sour, I'm going to guess you're probably buying them at a standard grocery store. Storebought are often lacking in flavor, and very tart. This is because they're picked before they're ripe, so they don't go bad in shipping (this is standard with most produce that travels long distances)
While strawberries are, in my experience, naturally more tart than I think people expect, when picked ripe and fresh, they are much sweeter and easier to enjoy on their own.
I live in a naturally mild and wet climate, for reference. Strawberry season is fairly short here, but when it is in season, no other strawberry compares
