“The Flavour of Spring” . A 6-course pop-up dinner by Mielye Mitchell (Chef de party at AnnaLena) hosted at @aphroditesorganiccafe , a showcase of incredible culinary talents, as well as beautiful organic produce from the local farms such as Glen Valley Organic Farm Co-Op, @solefoodfarms, and @ubcfarm. . Swipe▶️for more . The dinner is paired with a list of delicious BC wines, curated by seasoned sommelier. . There are highlights of brilliance in the dinner, with techniques that I’d never seen. The Dashi Mayo in the lettuce salad is amazing. And the puffed rice, which should be the salad crouton of 2018. The hazelnut crumble in the asparagus. The red cabbage puree for the trout, which is so creamy but without any added cream or oil. The touch of lemon in the ricotta tortellini, and the tenderness of sou-vide short rib, making a meaty dish so delightful, which is no easy task. The lovely dessert plays on different ideas on milk and honey, very memorable.
