Photographed by Mary McCartney Mushroom & Chestnut Pie Makes 4 Serve with roast partnips and greens Prep: 20 mins Total time: 1 hr 25 mins plus cooling Get ahead! Make the filling up to a few hours ahead, cool and chill Ingredients 2 tbsp olive oil 2 leeks, rinsed, tripped and chopped 1 red onion, chopped 1 x 250g pack chestnut mushrooms, halved 2 tbsp tarmari or soy sauce 1 tbsp mushrooms ketchup 1 tbsp chopped fresh sage 1 tbsp chopped fresh rosemary 1 tbsp chopped fresh thyme 1 1/2 tsp English mustard 1 x 240g tin cooked, peeled chestnuts, quartered 1 tbsp cornflour 1 1/2 tsp vegetable stock powder (such as Swiss Marigold reduced-salt bouillon powder) 1 x 375g pack ready-rolled puff pastry 1 medium egg, beaten 1. Preheat the oven to 200 C, gas 4. Gently heat the oil in a large frying pan. Add the leeks, onion, mushrooms, tarmari sauce and mushroom ketchup. Saute for about 15 minutes, stirring regularly. Stir in the herbs, mustard and chestnuts 2. Meanwhile, put the cornflour and stock powder into a mixing jug. Stir in 500ml cold water and mix well 3. Gradually pour the stock into the leek and mushroom mixture, mixing well with a wooden spoon. Bring to a gentle simmer and cook, stirring often, for a further 8-10 minutes until thickened. Divide the mixture between 4 x 300ml individual pie dishes. Leave to cool. 4. Unroll the puff pastry on to a clean floured-surface, roll out a little thinner. Brush the edges of the pie dishes with a little beaten egg to help the pastry stick. Cut out 4 pastry lids and place on top of each pie dish, crimp the edges with a fork if you like. Cut out festive shapes from the remaining pastry and use beaten egg to secure them on top of the pie. 5. Brush with the remaining beaten egg. Bake for 35 minutes until golden; serve straight from the oven.
