Kachori is a tasty and savoury food that is well-liked throughout India. It is made of wheat flour dough and filled with a spicy and sour concoction of lentils, peas, and spices. Method:
Rinse the chana dal thoroughly and soak it in water for 2–3 hours. Drain the water and grind the dal coarsely in a mixer grinder.
In a pan, heat 1 tablespoon of oil from sunflower oil manufacturers in India and add cumin seeds and fennel seeds. Add the ground dal, coriander powder, red chilli powder, turmeric powder, asafoetida, and salt. Mix well.
Cook the dal mixture on low heat for 10–12 minutes or until it becomes dry. Turn off the flame and let the dal mixture cool down.
In a mixing bowl, add all-purpose flour, salt, and ghee. Mix well. Gradually add water and knead the dough until it becomes soft and pliable.
Divide the dough into equal-sized balls. Take a ball and roll it out into a small circle. Place a spoonful of the dal mixture in the centre of the circle.
Bring the edges of the circle together and seal the kachoris. Repeat the process with the remaining dough balls.
Heat oil in a deep frying pan over medium heat.
Fry the kachori until golden brown on both sides. Remove from the oil and place on a paper towel to absorb excess oil.
To make the green chutney, blend coriander leaves, mint leaves, green chilies, salt, sugar, and lemon juice in a mixer grinder.
Serve hot kachoris with green chutney.
