Creamed Onions
A mid-century favorite great served with a ham slice and crunchy green salad. The trick to making this dish is to keep a weather eye out while stirring the sauce.  It’s easy to make and may spark your cooking imagination for other ways to use this traditional sauce!
water to cover onions
4 c. tiny white onions, dry skins and root removed
6 T. margarine
3 T. whole wheat flour
1 ½ c.milk
dash salt
Hungarian paprika or Smokey Spanish paprika
In a large sauce pan, add water and onions.  Heat to boiling.  Reduce heat, cover and simmer until onions are tender.  While this is cooking, in a smaller sauce pan on medium heat, melt margarine stirring in flour until smooth.  Slowly whisk in milk stirring constantly until smooth and thickened.  Drain onions, transferring to a serving dish.  Drizzle sauce over onions, sprinkle paprika lightly.
