July 18th - Fort San Domingo, Tamsui Old Street, and Ferry
Last night, some of us decided to go on a bar crawl, which extended far into this morning. The bar crawl was kind of boring because they weren’t really any people in the bars except for us and they didn’t play any music. The last place our guide took us on the crawl was a club called Ruff, which was super fun. I have never been to a club like it. In Gainesville, we have clubs, but they are nothing like this. The music makes your entire body vibrate, there are lasers, smoke machines and women drink free. We were having a really good time and then all of the lights turned on. Then, around 20 cops walked in and started checking everyone’s passport. After about 30 minutes of waiting, the lights turned back off and the night resumed. I didn’t get home until about 3 am. Then, I woke up bright and early at 8 and couldn’t go back to sleep. I just laid in bed until it was time to go pretty much. First, we went to the Fort San Domingo, which reminded me a lot of the forts in St. Augustine. Next, we went to the Tamsui Old Street, which was pretty much like the night markets, but it just operated during the day. I picked up some tanghulu, which is Chinese candied fruit. Today I got grapes, but I think I prefer the strawberries. Lastly, we went on a ferry ride which was my favorite part of the day. After we crossed, there was some beautiful ocean scenery and boats. I even got to try some cuttlefish. I am extremely tired after the day, so I’m ready to go back home and get a good night of sleep before tomorrow!
Academic Reflection
There wasn’t a reading for today so I will focus my research on Fort San Domingo, which was our first activity of the day. It was built in 1629 by the Spanish in order to aid their conquest of the area against the local Chinese and aboriginal people. It was then captured by the Dutch in 1642 when they drove the Spanish from Taiwan. Then, the fort was referred to as “Hongmao Castle” which was derived from the read headed appearance of the Dutch inhabitants. Then, in 1867, the British leased the forts and renovated it, giving it red roof tiles and a red brick veranda, which gives it the iconic look it has today. We got to see some old brick protected by glass on our tour of the fort, along with some canons that helped defend the fort. I always think it’s so interesting to see how people used to live and I cannot imagine summers in Taiwan without air conditioning. With that being said, they did have an incredible view.

Two Days of Eats and Two Nights of Lights in St. Augustine, FL
It was 100% still Christmas when I visited St. Augustine with my family Jan. 22-23.
We caught the tail end of St. Augustine Nights of Lights from the historic bayfront. Here are the highlights, in photos:
Staying at the Hilton Historic Bayfront. The Hilton Historic Bayfront turned out to be a great home base, placing us within four blocks of Harry's Seafood Bar and Grille, Casa Reina, Tini Martini Bar, Meehan's Irish Pub & Seafood House, the St. Augustine Municipal Marina, and Plaza de la Constitucion. This is to say that we ate and drank very well, and we could easily walk to the Plaza, the heart of the seasonal lights display.
Martinis at the Tini Martini Bar at Casablanca Inn on the Bay. If you've ever taken a ghost tour of St. Augustine, you might have heard of the Casablanca Inn ghost. According to local lore, the widow who owned the inn hosted rumrunners during prohibition. Rumor has it she'd shine a light from the roof of the inn when the government men left town and it was safe for the rumrunners to come into port.
"While her name remains unknown to this day, the lady of the house still makes her presence known," the story reads on the Inn's website. "Residents across the Bay, those traveling by boat and pedestrians on foot have reported a light shining bright atop the Casablanca Inn on the Bay on a clear moonless night."
The Lady of the Lantern was known for her rum punch, but the Tini Martini Bar is known for its martinis, especially dessert martinis. And their Christmas decorations during Nights of Lights are beyond compare.
Oreo Beignets at Harry's Seafood Bar & Grille. I could rave about every cocktail and food item I've ever had at Harry's, but where else are you going to get oreo beignets? It's like fair food meets New Orleans, and it's delicious.
Meehan's Kerrygold cheese sauce (used in their Mac & Cheese and served with their Reuben Rolls) and award-winning homemade Irish Cream. If I was in St. Augustine longer, I would have returned for the official Nights of Lights brew and dessert - they make a freshly-baked Guinness Chocolate Cake and Jameson Bread Pudding.
THE LIGHTS!
The lights at the Plaza de la Constitucion. It's the most popular selfie spot in all of the Nights of Lights. The second most popular selfie spot was in front of the "Nights of Lights" sign at Hilton Historic Bayfront.
St. Augustine Land and Sea Tours' St. Augustine Nights of Lights luxury golf cart tour. We practically had the whole cart to ourselves as Wendy drove us around St. Augustine, pointing out all the best light displays during the Nights of Lights.

Celebrate the holidays in these 5 cozy US festival towns
The winter holidays are coming! For some, the holidays come with Christmas cheer, family gatherings and cozy cuddles. For others, the winter months can be isolating and lonely. Our cure? Travel. What better way to change things up than by going somewhere new? You don’t have to stay at home and watch a Hallmark movie. Why not get out of town and experience the magic and cheer for yourself? This winter season, we’re bringing to you some of our favorite American towns to celebrate the holidays in. Between the mulled wine, Christmas carolers, winter markets and outdoor ice theaters, you’ll create memories that’ll last long after the snow melts away. The best part? These towns are all over the U.S. so you won’t have to fly across the country to get a taste of the special winter festivities.
There are five US towns we think are worthy of a special trip out for a holiday celebration. First up? Kennebunkport, Maine.
Kennebunkport, Maine
If you need a cozy town to celebrate the winter season, the Christmas Prelude celebration in Kennebunkport offers everything from classic tree-lighting ceremonies to a Christmas story reading from Santa Clause in a cozy cabin. The whole town comes together to make the magic come alive. You can take a trolley ride through a private heritage railroad or watch a coffee roasting demo with a vintage Germany coffee roaster.
For a little +21 fun, you’ll want to buy tickets for the Fire + Ice event. It’s one of the biggest events of the holiday, featuring carved ice sculptures and drinks served from ice bars. Are you a dog lover? Show off your dog at the Pooch Parade, where doggos of all kind dress up in festive outfits and parade together.
Woodstock, Vermont
Woodstock has a population of less than 5,000, so you already know you’re stepping into an intimate experience when you celebrate the holidays here. It’s the perfect place if you enjoy outdoor activities but also want the option to cozy up by the fire. You can go skiing on the Suicide Six ski mountain or hike up Mount Tom.
If you’re ready for something a little warmer, head to the Woodstock Inn. We’re not trying to tell you where to spend the night, but Woodstock Inn is where to spend at least part of the day. Each year, a giant gingerbread house is on display within the inn, and the whole place is decked in twinkling lights. You’ll want to curl up by the fire and sip the hot cocoa, it’s in the air here. There’s even a special parade for horses. Strutting around at the Equestrian Parade are all kinds of horses and their riders, dressed to the nines. Want some alone time after the festivities? You can take a walk through decorated homes open for tour or over the famous Tafstville covered bridge.
St. Augustine, Florida
Do you love to celebrate the winter holidays but dread the thought of the accompanying weather? You don’t have to brave the cold to celebrate the winter cheer. St. Augustine, the oldest city in Florida, throws a party for the whole city during the Nights of Lights. Million of lights cover the city, and you can ride a horse-drawn carriage through the streets or stroll on foot. The Holiday Regatta of Lights Boat Parade on December 9th brings a special St. Augustine-ian twist to the festivities as all kinds of boats float on by, bedazzled with lights. You can even book your own tour to admire the parade from a boat!
The magic doesn’t end there! The Nights of Pints were made for the craft beer lovers, and local breweries present the best of their batches for you to sip. You can also wander through historic 19th century houses on an exclusive once-a-year Christmas Tour of Homes. It’s only on December 8th, so plan accordingly!
Solvang, California
A visit to Solvang is fun on any given day, thanks to the Danish influences on food, architecture, and culture. It’s especially magical during the winter holidays with Santa-worthy festivities. If you fear the cold, don’t worry. There’ll be no white Christmas here. Julefest Holiday spans a whole month, and the activities include free candlelight tours and music in the park. Saint Lucia Day is the latest addition on December 13 with a dedicated parade procession led by a group of women in white.
If you’re coming with children, they’ll love meeting Santa and Mrs. Clause at Santa’s Village. No children? Enjoy the Skal Wine and Stein Stroll, two days of wine and beer tasting. There’ll even be Glogg, a special Danish alcoholic drink similar to mulled wine. To ends the festival? The Tree Burning safety demonstration, with the supervision of the Santa Barbara Fire Department, marks the official end to Julefest.
Vail, Colorado
The snow-covered slopes of Vail are perfect for an outdoor winter adventure. Activities like dog sledding and snow tubing are enjoyed by visitors and locals alike. There are even indoor and outdoor skating rinks to practice your flip jumps! For the less exertion-inclined, Vail doesn’t disappoint either. Kris Kringle Market has all kinds of trinkets and toys to bring back home as souvenirs or stocking stuffers. You won’t go hungry at the market: there’s homemade baked goodies, roasted nuts and other sweets.
One of our favorite highlights of wintertime in Vail is the Vail Winterfest Ice Theater, where films are projected onto an ice screen. Ice chairs are carved out for movie watchers, and holiday classics are played into the night until the ice screen melts. It goes without saying that you should pack an extra layer for this outing!
