That Sunny De-licious Reconstructed Treat - Done I'm not a fan of bottled/packaged food as you know. But but I can't resist the spreads that @licious_foods sell. One of the biggest reasons that I eat them is because there are no preservatives & they use real meats. I have loved eating their creamy luscious chicken dips & was delighted when they introduced this awesome Chunky Prawn Sriracha Spread. I tried one bite on toast just to understand the flavours & I knew this would be a fantastic dip for french fries & other fried yummies. It was nice & tangy with just the right amount of foofoo-ness. But then what's the fun if you do the obvious? So I decided to reconstruct the chip & dip concept I pressure cooked peeled & diced potatoes in salted water. Once done I added rice flour & fresh coriander & kneaded to a soft smooth dough I portioned out into balls, made a depression & dropped spoonfulls of that chunky prawn sriracha, sealed the opening, lightly rolled in rice flour & pan fried in a cast iron pan till golden brown I'm telling you these were pure heaven to eat!! I'm truly a big fan!
