SAN ALBERTO, Low Lands, COLOMBIA

This year I promised myself, that I will find something special for roasting. I mean, I was always addicted to Nicaraguan Specialties and my top favorite for very long time was micro-lot Finca El Bosque from Julio Peralta with amazing rum & raisins flavor. But I was also thinking about some Colombian stuff despite that I've never been a big fan of this origin.

But I gave it a try, I ordered a sample of nano-lot San Alberto farm, Low Lands. And I was really really surprised and amazed ! Great juicy, rounded body, winey acidic coffee with smooth chocolate finish. So I ordered a 35 kilo bag and started roasting. I can not describe the aromas of this coffee, it was like wine gums, very very fruity notes.

I also speak to managing director and quality grader Juan Pablo Vilotta. Juan is the 3rd generation of family working on this farm.

So here are some details directly from Juan:

Plantation

Whole farm has 40 hectares, 1.500 - 1.800 masl. 

Varietal:   80 % caturra, 15% castillo , 5% under experiment Process:  Washed Profiles:   We created 2 different processes= Fine Selection and Quintuple Selection.

Hand sorting of the cherries and of the wet parchment are key steps for quality. I´m the q grader of the plantation, every packing day will be evaluated and a tag will identified each picking day.

We keep the coffee separate by picking day at our warehouse and we will only mixed them in the dry process.Every picking day will have a code ( a number ) and I will tasted it several times to see the evolution and be 100% sure of the quality and profile.

I´m the 3rd generation of the family working in the farm. It was my grand father the one who started the business back in 1972. My father and mother are still running the plantation and my brother and I are responsible for the quality, commercial aspect, marketing… building a proposal of exquisiteness, luxury and sophistication for our beans.

Roasting

We have 2 Diedrich roasters. a 2.5kg for the lab and experimental roasting and a 12kg for the daily roast.

We love light roast, so even our ¨espresso¨ profile will be in some way light.

We roast every week to share freshness for our medium roast ( ideal for drip ) and for espresso we try to keep some stock with 20-30 days of rest. For Colombia we never shared a single varietal roast, we believe in the assemblage technique of the wines. In this way we try to maintain the profile through the time and harvests.

For Colombia we only roast Quintuple Selection coffee, the most premium beans of our plantation. For the green coffee market, yes we shared single varieties, single picking.
