I don't know what to make for dinner this week! Ideas would be appreciated <3
I got a slow cooker for Christmas so I should probably use that eventually. I'm thinking a pork roast
personally, i plan on making pulled pork sandwiches later this week. so like, you could do that!
so what you do is you get it in the slow cooker EARLY. let it do its full cycle and when it's about an hour away you mix up a sauce. tomato sauce, pineapple juice, worcestershire, hot sauce, teriyaki/soy sauce, apple cider vinegar, molasses/brown sugar, red chili flakes, some broth for body and some corn starch to thicken it. if you have any, maraschino cherry juice too. let it thicken and cool. then you shred the meat, let it rest a bit, then toss it in the sauce, throw it in a baking pan, cover with foil, and toss it in the oven for an extra hour at a low temp. top with cheese and extra hot sauce to taste. if you feel like going extra fancy, thinly slice then caramelize some red onion for on top
oooh now I'm excited for that
or another slow cooker meal I'm asked to make frequently is creamy shredded street tacos. chicken breasts, jar of salsa, and a bottle of crema mexicana table cream (but a block of cream cheese would work too). that of course gets shredded and put on tortillas, covered in pico de gallo and squeezed lime on top. bam.
finally, no crock pot for this one, but you could always make a bitchin' salad. like go crazy with the ingredients. blueberries, raspberries, bacon bits, egg, radish, carrot, peppers, sausage, corn, jalapenos, clover sprouts, multiple cheeses, italian seasoning, mushrooms, artichoke hearts, literally go crazy. an indulgent salad is soooo good for the soul. and the nutrition can't be understated either.

This Crockpot Pulled Pork recipe delivers tender, flavorful pork with a kick of spices. Perfect for sandwiches, tacos, or serving alongside your favorite sides.
Ingredients: 4 lbs pork shoulder, trimmed. 1 onion, chopped. 4 cloves garlic, minced. 1 cup chicken broth. 1/2 cup apple cider vinegar. 1/4 cup brown sugar. 2 tbsp chili powder. 1 tbsp paprika. 1 tbsp cumin. 1 tsp cayenne pepper. Salt and pepper to taste.
Instructions: In a bowl, mix together chili powder, paprika, cumin, cayenne pepper, brown sugar, salt, and pepper. Rub the spice mixture all over the pork shoulder. Place the chopped onions and minced garlic in the bottom of the slow cooker. Pour in the chicken broth and apple cider vinegar. Add the seasoned pork shoulder to the slow cooker. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the pork is tender and easily shreds with a fork. Once cooked, remove the pork from the slow cooker and shred it using two forks. Easy to make and very tasty, these tacos with pulled pork are cooked slowly. A tasty mix of spices is used to season the pork shoulder, and it is cooked to perfection in a slow cooker. For a dinner that everyone will love, put the soft pulled pork on warm corn tortillas and top them with your favorite taco toppings.
Ingredients: 4 lbs pork shoulder, trimmed and cut into chunks. 2 tablespoons olive oil. 1 cup chicken broth. 1 large onion, finely chopped. 4 cloves garlic, minced. 2 teaspoons ground cumin. 2 teaspoons smoked paprika. 1 teaspoon dried oregano. 1 teaspoon chili powder. Salt and pepper to taste. Corn tortillas, for serving. Your favorite taco toppings salsa, shredded cheese, guacamole, etc..
Instructions: Warm up the olive oil in a big pan over medium-high heat. Add cumin, smoked paprika, dried oregano, chili powder, salt, and pepper to the pork chunks. Put the pork in the pan and brown it all over. Put the pork in a slow cooker after it has been browned. Chop the onions and cook them in the same skillet until they are soft. Then add the garlic and cook for one more minute. Add chicken broth to the pan and scrape the bottom to get rid of any browned bits. Add the pork to the slow cooker along with the onion and broth mixture. Turn the heat down to low, cover, and cook for 6 to 8 hours, or until the pork is soft and can be pulled apart with a fork. When the pork is done, shred it with two forks in the slow cooker and mix it with the tasty juices. Mix the pulled pork with the corn tortillas while they are still warm.
