Silvereyes are very small omnivorous passerine birds of the south-west pacific. They also happen to have inspired the name of @silvereye_restaurant at @theoldclare... Here the former sous chef of Noma in Copenhagen - Chef Sam Miller - applies his northern European culinary approach (think: more pickling, fermenting, salting, curing and smoking than you can shake a stick at) to down under ingredients.
