Who makes up the crew?
Many people are unaware that despite their size, merchant ships don’t carry large crews. In the bygone era of break bulk “stick” ships, vessels sailing for companies like Farrell Lines, Lykes Lines, Moore McCormack Lines and American Export Lines carried upwards of 40 crew members. Today most vessels carry 20 to 23 in the crew (we carried 24 once, when we had cadets aboard, and we were considered overmanned.)
So what jobs make up the ranks of a merchant ship? What are the titles and occupations found aboard? Well you’ll find these men and women spread out in three different departments; Deck, Engineering and Steward.
DECK DEPARTMENT:
Master (Captain) - Stands no watches (for they are always on watch) and come and go as they please. They are not part of the crew, rather they are company officials on board to oversee that everything is done in according with both the law and company policies. They are responsible for everyone and everything aboard. *Always* addressed as “Captain.”
Chief Mate - Known as “The Mate,” they are the head of the deck department and oversee all routine operations within it. They assign maintenance work to the unlicensed deck gang through the Bosun, handle overtime and plan the load/discharge of cargo and provide cargo orders/load plans to the mates on watch for their reference. On three-mate vessels they typically stand the 0400-0800 and 1600-2000 watches at sea and the 0800-1600 cargo watch in port.
Second Mate - Navigator and most commonly the medical officer aboard ship. They prepare the charts for a voyage (updating/correcting), update and maintain the electronic chart display systems, create the overall voyage plans and amend them as necessary and calculate the daily noon slip. During pre-arrival and pre-departure briefings the Second Mate will usually provide the officers with details pertinent to the transit to or from the berth and required check-in procedures and radio channels. Stands the 0000-0400 and 1200-1600 watches at sea and the 0000-0800 cargo watch in port.
Third Mate - Safety officer (and junior most officer) and typically the officer who conducts new crew familiarization training for the vessel. The Third Mate inspects and maintains the lifeboats, liferafts, lifejackets and firefighting equipment/systems. There is usually so much of this equipment aboard the ship that the monthly inspections take the entire month to complete, therefore ensuring the process is a never ending one. Stands the 0800-1200 and 2000-2400 watches at sea and the 1600-2400 cargo watch in port. It’s important to remember that despite being the junior most officer aboard ship, this does not mean the Third Mate is inexperienced or new to the job. Some of them are very old timers with years or even decades of experience, but prefer sailing as Thirds or Seconds as opposed to the senior management  ratings of Chief Mate and Master.
Bosun - Liaison between the unlicensed deck seamen and the Chief Mate. The Bosun is a senior Able-Bodied Seaman who acts as the foreman. Once the Chief Mate hands down the work list for the day, the Bosun divides the work up and ensures it gets done. Also collects all deck overtime sheets for submission.
Able-Bodied Seaman - Also abbreviated “AB,” these are the qualified unlicensed members of the deck department. Typically have a few years of seatime and experience. They are qualified to stand watch and steer the vessel at sea or in transit to the berth. At sea they can be found on deck scraping rust, priming and painting surfaces, splicing/repairing lines and wires and conducting basic sanitary duties.
Ordinary Seaman - Abbreviated “OS,” this is the entry level deck department position and requires no prior experience. They are often found on deck working with AB’s learning the ropes of shipboard life and getting prepared to take the examination for upgrade to AB.
ENGINEERING DEPARTMENT
Chief Engineer - In charge of the engineering department. Reports only to the Master and keeps records of fuel consumption, slip and maintenance of systems in the engineering department.
First Assistant Engineer - “The First” is perhaps the busiest in the department. They are dayworkers in charge of the main engine and refrigeration systems, but also handle work hours/overtime for the whole department. They’re essentially the Chief Mates of the engine room.
Second Assistant Engineer - “The Second” is usually in charge of boilers, fuel, auxiliary engines, condensate and feed systems, and play a very big role in bunkering operations. 
Third Assistant Engineer - “The Third” is usually responsible for electrical, sewage treatment (resulting in the nickname  "turd engineer" or “turd third”), lube oil, bilge, and oily water separation systems. They can also assist the Third Mate in the weekly running of lifeboat motors.
QMED - “Qualified Member of the Engine Department.” These are the “AB’s” of the engine room. The QMED performs a variety of tasks connected with the maintenance and repair of engine room, fireroom, machine shop, ice-machine room, and steering-engine room equipment. Applicants for QMED are required to pass a QMED General Knowledge Examination and at least one of the following rating exams:Fireman/Watertender, Oiler, Deck Engineer, Junior Engineer, Refrigeration Engineer, Electrician and Pumpman.
Wiper - Entry level unlicensed engine room rating. Wipers keep the engine spaces clean and assist as directed in any major overhauls or repairs of machinery in the engine room and work towards becoming QMED’s.
STEWARD DEPARTMENT
Chief Steward - Runs the department; prepares menus for all meals, conducts inventory of supplies, orders provisions and supervises the sanitation/cleanliness of the mess areas.
Chief Cook
Baker
Steward Assistant - Pot washers, table setters and bed makers for officer berthing. Entry level position in this department, formerly known as Food Handler and Messman.
