GAVALAS - BEST - GREEK - WHITE - WINE

If you’ve not seen the inside of a traditional Greek Cavana winery in Santorini, then this is probably one of the best! These photos are from our friends at Gavalas winery in Megalochori, on the famous volcanic island (and wine region, if you didn't know!) of Santorini! 

It’s amazing to think that the white-washed harden walls and ceilings of volcanic pumice, literally have the vine roots of the ancient un-grafted vines in the Gavalas vineyards, above and behind them! The traditional wineries of Santorini go deep underground to keep a constant cool temperature for the grapes and wines in production, while the vines and vineyards run across the top of the winery!

Wine tasting in Santorini is an incredible experience! Where else can you find a tasting room just steps from the Aegean Sea! Throughout my trip to Greece, I was most impressed with the Assyrtiko from Santorini. Because phylloxera cannot survive in Santorini’s volcanic soils, there are many old vines grown on their own roots. Fascinatingly, due to the strong winds and harsh sun, these vines are grown in the shape of a basket (swipe left to pics 5-8) and the grapes grow inside the basket where they are protected from the elements. These old vines vines produce Assyrtiko that is dry and mineral driven, with lots of acidity and a crisp, refreshing finish. Assyrtiko is the perfect pairing for seafood and an excellent value, even on wine lists! Some of my favorite producers were Hatzidakis (pic 9), Argyros Estate (pics 2, 4, 5-6), and Gaia (pics 1, 3). My trip to Greece literally ended on a high note as I soaked in the rarefied air of Oia, Santorini while sitting in the Aegean Sea’s equivalent of Jack Nicholson’s seats at the Lakers! I paired these stunning views with Argyros Estate Aidani (pic 2), the fava beans for which Santorini is famous (pic 3), and sea bream (pic 6). While often overshadowed by or blended with Assyrtiko, Aidani makes a very nice, dry white wine on its own. This wine featured aromatics of flowers and lemon, abundant acidity and lots of minerality.
