Roasted Tomatillo Salsa

I love food....I love discovering new recipes....and I love finding new foods to cook with.  

I particularly have an affection with Mexican food- it’s so tasty and filling.

The recipe I’d like to share is for homemade Tomatillo salsa or salsa verde.

Tomatillos can be found at many international markets or in places you would least expect like a local flea market (we have a nice local farmers booth at a flea market near us) but you rarely find them at your normal grocery store. Get the ones that still have a nice green husk on them and that are on the smaller side.

I would like to note that I make recipes for my family which includes two young boys that do not like food very spicy- so you will find that I do not add many peppers to recipes where you may usually expect to find them.

Ingredients:

Tomatillos (I use anywhere from 5-10 depending on how much I want to make)

Cilantro - I pile it in there- for me, the more the better

Onion- only about 1/4 C (chopped)

Lime juice- 1-2 tbs

dash of salt

1.Preheat Broiler and raise top rack so pan will be around 4″ away from broiler

2.line baking sheet with foil 

3.de-husk the tomatillos and place on pan

4. broil for about 4 min or until they start to brown

5.flip and broil until browned and juices running (about 4 more minutes)

6. let them cool while adding all ingredients into food processor

7. Add roasted tomatillos **With the juices from pan** -Pulse until the consistency you desire

Enjoy!

Add avocado to make it creamier if you desire
