Dal batichurma: It is the signature dish of Rajasthan. Bati is the dough that is stuffed with refine oil, ajwain, salt, chilli powder, heeng and baked until it is crunchy enough. Then this crunchy Bati is dipped in ghee and served with dal (lentil curry).
Churma is a sweet dish. Coarsely ground flour crushed and prepared with ghee, sugar, cashew and raisin. This spicy and sweet dish is a great combination—a perfect dinner after a day-long trip.
Gatte ki sabzi: Gram flour (besan) stuffed with salt, turmeric powder, ajwain, coriander powder, red chilli powder is used to make dumplings. These dumplings of gram flour (besan) dipped in a tangy gravy of curd or buttermilk, tomato and various spices to prepare this dish. You can enjoy this dish with roti and rice.
Kadhi: This gravy is made up of buttermilk, gram flour, spinach, and besanpakodas are added to this gravy. The gravy is a bit sour, which will give your taste buds a different taste. You can enjoy kadhi with steamed rice. A nice one for lunch!
Bajre ki roti: Rajasthan is the top producer of this highly nutritious Pearl Millet (Bajra). Generally, in the village areas, thick Bajra rotis are baked over coal or cow dung cake. It is mainly served with garlic sauce (lahsun ki chutney).
Onion Kachori: Pyaaz ki kachori is made from flour, and onions mixed with spices is filled inside. You can take onion kachori with chutneys and kadhi. An excellent dish for breakfast!
Mawa Kachori: Areyou bored of eating spicy samosa and kachori? Don’t worry; this yummy sweet kachori is the perfect dish for sweet lovers. This kachori is filled with mawa and various dry fruits.

Boondi Raita: A little sour, a little salty and a little spicy dish will surely refresh your flavour. Dry spice powders like coriander powder, chilli powder, cumin powder are mixed with curd. Boondi is added with this, and lastly, chopped coriander leaves or mint leaves are mixed. It best goes well with jeera rice, biryani or pulao.
Kalakand: Alwar, a city in the foothills of the Aravalli ranges, is famous for kalakand or so-called milk cake. This soft and luscious sweet is perfect for your dessert. Condensed milk is mixed and boiled with chenna until it starts to thicken. This sweet is flavoured with cardamom and sometimes decorated with chopped nuts.
Masala Chaas (Buttermilk): Rajasthan and masala chaas both are deeply connected. This refreshing drink is must need due to the harsh weather condition. The tangy mustard-flavored liquid, known as 'kanji' or 'rai ka pani,' is prepared by fermenting water with mustard seeds, salt, and spices for a day or two, allowing the flavors to develop and mellow down. This liquid is what gives the dish its distinct flavor.
For the beetroot variation, large chunks of beetroot are marinated in the same mustard-flavored liquid, imparting a rich red color and tangy taste to the dish. This variation, known as 'Chukandar kanji,' is especially popular during the festival of Holi, adding a vibrant touch to the celebrations.
When serving kanji vadas, it's customary to provide plenty of the tangy liquid alongside the crispy vadas so that diners can enjoy a refreshing sip of kanji after relishing the savory vadas. This combination of flavors and textures makes kanji vadas a beloved snack, enjoyed by locals and visitors alike on the streets of Rajasthan.

Kanji (Fermented Tangy Drink with Beet Juice)
Ingredients:
Water
Asafoetida
Turmeric powder
Red chili powder
Yellow mustard
Salt
Black salt
Beet juice (for color and flavor)
Instructions:
Pour cool water into a glass or plastic container.
Add asafoetida, turmeric powder, red chili powder, yellow mustard, salt, black salt, and beet juice. Mix well.
Close the lid of the container and keep it aside for 3 days. Stir with a clean and dry spoon once a day.
Taste the water on the fourth day. Kanji is ready if it tastes tangy, spicy, and tasty.
Wadas
Ingredients:
Urad dal
Salt
Oil for frying
Instructions:
Clean urad dal, wash, and soak it in water for 2 hours.
Drain the water and grind the urad dal. Transfer the ground dal into a bowl, add salt, and beat the mixture.
Heat oil in a karai (wok). Make small wadas with your hands and fry 8-10 wadas in oil at one time until they become fluffy and brown.
Transfer the fried wadas onto a plate. Fry all wadas in this manner.
Soak the fried wadas in lukewarm water for 15 minutes. Drain the water after 15 minutes.
Serving:
Put 4-5 wadas in a glass.
Pour kanji over the wadas.
Serve and enjoy this refreshing drink.

Veer was born in a village in Northern India so small it doesn't even appear on any maps. The fourth of seven children, Veer had two ways to go in life: escape to the city or hope his father would take him on as an apprentice. He had bigger dreams, and his cunning made it so eleven year old Veer landed in New York City by cargo boat, ready to make a life for themself.
At age twelve they were cleaning tables and doing dishes at a pizza restaurant.
At age fourteen they were pickpocketing unsuspected patrons at the local casino's.
At age sixteen they had started robbing all over. They had gotten plenty of enemies and a good number of... more enemies.
Ten years ago they got into a situation with law-enforcement (read: got framed) and were put away for what should've been twenty years, if not for a nicely planned escape a year back (and a semi-successful one 6 years ago). He came back for Chaos and he managed to find it at the Snake Den.
Sadly, six years ago, during a daring and perfect escape, Veer got their ex-girlfriend (or whatever they are now, they don't know) pregnant before getting captured again. They were unaware of it until some time ago, when they learned of their daughter - and instantly felt protective.
They're very quirky and goofy, but that's just to throw you off.
