Confessions of 2020..
(tw: covid mention, mental health mention)
I wanted to post a little something that might put out some insight for my followers, friends, mutuals alike. With the recent battle I had with some personal blogs attacking me over some posts I made because of the images, regardless of the purpose of the post. I just wanted to let everyone aware of why that sent me over the edge and why I handled it the way I did. Please note: I will not be apologizing for what I said, I do feel as though those that tried to reach out to me did not realize the purpose of the post. And while I understand now I should just tag things like that differently, I will not be apologizing for stating the fact that this is a rp blog and I do not appreciate personal blogs attacking me over something like that. That being said, I will not be bullied off tumblr or this account. Because I love JJBA and Joseph Joestar. So for future reference, if you don’t like my content, unfollow it. Don’t bother sending me nasty remarks because I do not have the time for those types of things. But I wanted to open the doorway to some insight for you all who have been paying attention or who just might care to know why I came off so incredibly outraged by that little bit. Because to me it was just the topping of a whole bunch of bullshit as is 2020. This whole shithole of a year began in March. I got promoted at work to salary. That’s 35k a year my friends and that’s a hell of an upgrade for someone who barely makes a living wage right now and came from a working poor family. I really thought my life was gonna turn around. For once my fiance and I wouldn’t have to struggle so hard and we could afford to do everything we talked about doing. Well guess what--2 weeks after the announcement of my promotion my work place shut down because of Covid-19. Nothing new, lots of people and places were shut down. So fine, it pushed back my transfer and such. That wasn’t a big deal. Enter June 2020. We re-open and my manager calls me into his office to talk to him about said mentioned promotion. They are suspending it, means it could be pushed back until we could lift the restrictions. Understandably so, I would just have to keep my old position, an hourly one, until they were called back. Now the months pass, June becomes July and enter August. I find out about a week before the company announces it at the start of August, the position I was promoted to has been eliminated indefinitely. There is a chance they could come back, but right now they have no idea when or if that’ll happen. Which means that whole part of my department no longer exists at my place of work. I mean it’s a good thing I had my hourly position to fall back into or I’d lost my job. But that salary raise? Gone.
Rewind back to July. I get very very VERY sick. And have to test for covid-19 the first time. Only because I am so sick and have a roommate with asthma I have to quarantine myself for 14 days. So 14 days I am locked in my bedroom alone, sleeping alone after 3 years of being with someone in bed. My meals are being left at the door for me and the only room I am allowed to enter is the bathroom, but only after it has been sanitized. Only for my results to come back negative. And now... we enter September 2020. Two major things started in September. The first, our old, senior dog became very ill. Started losing weight, wasn’t eating, losing hair, etc. So we knew his time was coming soon enough. Mid-September, I wake up one morning while our dog is dying mind you, and I cannot move my body from the waist down. Every time I tried, I’m greeted with a shot of pain straight up my spine that feels something like a hot poker being stabbed right through my spinal cord. Very very painful. I end up bed-ridden for a day or two because I cannot move. So once the pain subsides, I go see a chiropractor. Shocking (not really) announcement that my sway back--to which I was diagnosed with 10 years prior from a bad car accident--has gotten worse. What does that mean exactly? Well--my spine bends in like a S for those who don’t know, which means my lower back dips inward deeper inside my body and my tail bone curves out. Now along that dip there are 3 or 4 vertebrae that are especially messed up. The bones have become staggered out of place on top of one another, just from the muscles pulling the bones out of shape since my spine doesn’t flex the way it’s supposed to anymore. (And it hasn’t for years). The pain before this was tolerable, it would ache from time to time but never like this. Now I am crippled more or less. Here’s what that means: my mobility became extremely limited. At first in the am when I woke up I couldn’t move from the waist down for the first hour or two after I woke up. Then when I was finally able to move, I had to use my forearms to literally drag my lower body upright (still painful). Once I was able to manage that, I had to gage how strong my legs were to support my weight. And at first walking wasn’t terrible, but as the treatments began--doctor appointments, spinal adjustments, and physical therapy--to correct my spinal issue, nerve damage became clear. So now on top of this horrible pain, I had to deal with weak legs. Because of nerve damage, my right leg especially became weak. On days my back would hurt especially bad, my right knee would collapse out from under me. Which meant falling to the ground and not being able to stand up or walk for sometime there after. Now imagine dealing with not being able to support your own body, not being able to hardly walk and your dog dying at the same time. So while I”m trying not to focus on the fact that my mobility is limiting me on what I can and can’t do, my fiance is upset about this. Our dog (then weighed about 100 or more pounds) could no longer walk either. His back legs and hips were giving out as his health declined. I did not have the strength in my own legs to help carry him because his weight hurt me too much and would cause me to collapse. I had to watch my fiance struggle with this practically all by herself while I sat on the floor, only able to use my arms to help with what I could because my legs and back were too weak to do the work. This carried on into October. Our dog passes away and that alone is hard for me. I still kind of wonder if I wasn’t so weak when he got sick if I could have helped prolong his life just a little longer. I couldn’t hardly look at him when he passed and I couldn’t look at anyone else. I was very angry that my legs and back had failed me. They had failed everyone. So yes, that weight still lingers over me. It was so bad that when it came time to take turns digging his grave, I struggled with the shovel. Because I couldn’t stand up or be bent over to move the dirt, I got on my hands and knees and I took that shovel in my hands and used my arms and shoulders to dig. I wasn’t going to continue to be useless because of my limited mobility. I felt I already let him down and everyone else by not being able to help take care of him while he was still alive and sick. This was the least I could do. November comes. Things are calm now, for a while. Not bad. I finally get some braces to help with my back issues (which still continue). I keep on with my physical therapy, trying to heal and help my fiance through her mourning over the dog. My mobility slowly begins to improve, though the doctor informs me it will be a very slow process. Small steps he says. But he is still confident he can fix my spine without back surgery so I can walk again, like a regular person. The limit I am able to stand and walk increases with the help of my braces and I begin taking herbal supplements and drinking herbal teas to increase the rate of my recovery. It seems to be working better than over the counter medication. The rest of 2020 seems promising. Here comes December. On the night my fiance and I decide to go out on a date to celebrate our 5 years together. I get a phone call from work. One of my co-workers tested positive for Covid-19 and I was exposed. I am now suspended from work without pay until my test results come back negative. A real mood killer for the night. It gets better, we get home and despite the dinner being pretty somber the rest of the night seems fine. We watch movies and spend time together, finish wrapping gifts for Christmas. Then we realize the cat is missing. He’s been missing all day and all night. Nobody has seen him. Two days prior, I had taken my cat to the vet because he was sick. Again, weight loss, losing hair, etc. I was worried he may be sick. Well it’s cold outside and here it’s been snowing so it’s very cold. I set something of mine outside and a literbox for smell. And then a plate of food. ....that was almost 4 days ago. There’s been not a sign of him. I called the county shelter and they didn’t have him. My fiance suggests he was sick so... maybe he got out of the house and went somewhere to die. My gut tells me he’s not coming back. And my heart is breaking, again. Again. I am wondering if I did something wrong. If I would have kept a better eye on him, I knew he wasn’t feeling right. I somehow feel like I let him down. And then I logged into tumblr and saw those comments. Those asks people were sending about the damn images I posted for the 12 days to Christmas. And they just kept coming. I deleted the other ones, I stopped replying to them and finally just deleted the post. The Christmas spirit had been sucked out of me. I feel as though the world has began to mock me for believing the year could get better back in November. I know one thing, the holiday won’t be as bright this year. Not for me. I hope everyone stays safe and has a good holiday. Maybe 2021 will be more promising, but I”m not banking on it. Not anymore. Thanks for reading. I hope you all understand now why I have been so slow with my replies lately. As my mood goes up and down because I have been struggling with the weight of all this and depression, just trying to hang on from losing hope that for one I will be able to walk again normally and then just the loss of my animals... everything. I can’t write and I refuse to send bad quality responses and starters for you all. I hope this puts some insight on why I was so horribly upset the other day. So thank you to all my friends and everyone who has been so patient with me on all my blogs. Jotaro (dmgdstar) and Johnny (rotatingstar) and this one of course. I will be catching up to everything very soon. I’ve already made a good dent in them. Your patience is always appreciated.

Quaran-Dine & Chill: Here are 12 Homemade Food Recipes From Some Of Your Favorite Bands
Look, we get it: You’re bored. You’re stuck at home with nothing to do and to top it all off you’re absolutely starving with no idea what to make except for a peanut butter & jelly sandwich.
Thankfully, we knew this would happen so we reached out to some amazing artists to see if they had any recipes to help us all get through this never-ending period of social distancing.

JAKE BUNDRICK - MAYDAY PARADE
JAKE’S OVERNIGHT OATS
Ingredients 1/2 cup oatmeal (any type will work but I personally like Old Fashioned or Rolled Oats) 1 cup water 1 scoop protein powder (It's not necessary by any means but I prefer French Vanilla from TrueNutrition) 3/4 cup of either frozen berries or fresh berries (strawberries, blueberries, raspberries, black berries... you can either add this now to soak overnight or wait until you're ready to eat and then add berries. It's up to you) 1 banana sliced 1 tablespoon of natural peanut butter
Instructions Mix oatmeal, water, protein and frozen berries together in a bowl or jar (frozen berries are optional). You could forego this and choose to add fresh berries later.
Cover and let sit in the fridge overnight or for a few hours -- your choice.
After soaking, add fresh berries if you haven't already. Then add bananas and peanut butter.
Enjoy.
MATT HALPERN - PERIPHERY
REALLY HEALTHY “CEREAL”
I love cereal but I don't want all the bad stuff associated with most cereals. So I came up with a healthy alternative. It's pretty simple.
Grab a bowl
Add Trader Joe's Go Raw Trek Mix
Slice up some strawberries and add them too
Throw on a couple blueberries
Add 1% milk
And there ya have it! Really hearty, really healthy, easy to make “cereal” that actually fills you up!
MATT GREINER - AUGUST BURNS RED
DEER CAMP BREAKFAST CASSEROLE
Ingredients 18 eggs 2 cups of milk 1 cup cheddar cheese 1 lb bacon 1 lb loose sausage 1 ts salt 1 tb pepper 1 pack hash browns
Instructions Pre-heat oven to 350 degrees
Brown sausage and bacon separately-drain
Pan fry hash browns until golden brown
Grease a 13” x 9” baking pan and line the bottom with hash browns
Add a layer of bacon
Add a layer of sausage
Whip the eggs in a large bowl, then add the mix, salt and pepper, mix well
Add the cheese to the eggs and mix again
Pour the egg mixture over the meat and hash browns
Cover with aluminum foil and bake for 25-30 minutes
Remove foil and bake until the top of the casserole begins to brown. Then remove from the oven.
BRENT WALSH - I THE MIGHTY
B-LEE'S BREAKFAST FEAST
Ingredients Hash browns 2 eggs Onions Garlic Mushrooms Peppers Cheddar cheese Black pepper Salt Ketchup Valentina (black label, extra hot) hot sauce Olive oil
Instructions First, get the hash browns going in a frying pan with lots of oil. They take the longest.
In a second pan, get all the veggies going adding garlic when everything else is almost done so that you don't burn the garlic.
When the hash browns are done, plate them and immediately add the cheese to taste.
The veggies should be about done by this time so add those on top.
Fry the eggs (I like mine over medium) in the original pan you cooked the hash browns in and add salt and pepper while they cook.
I like to top it all off with some black label Valentina hot sauce and a little ketchup.
Add a coffee and mimosa on the side and boom, you got yourself a good ol' quarantine breakfast feast.
MARK HOLCOMB - PERIPHERY
SRIRACHA TUNA SALAD
Take two cans of tuna, break it up in a mixing bowl, toss with two tablespoons of celery, half an onion and some chopped fresh parsley.
Add 1/3 cup of mayonnaise (or veganaise if you’re a tree-hugging hippy like me), 1 tablespoon mustard, and several tablespoons of Sriracha depending on how spicy you want it.
Top off with some ground pepper and lemon juice, to taste.
Also feel free to add half a diced apple if you like some sweetness and crunchy texture in there.
Delicious, healthy and super simple.
JEPHA - THE USED
GROOVY TOAST
Soak a cup of any kind of nut (almond, cashew etc..) overnight in water.
Next day, strain most of the water except for a little bit to help blend it.
Put soaked nuts in blender with a dash of lemon, a pinch of salt, pepper, two tablespoons of olive oil.
Blend until smooth.
Optional fun: slice something spicy like a jalapeño.
Add “Groovy cheese” to either toast or crackers.
Drizzle olive oil and lemon on top of “Groovy Toast” with a spicy, spicy jalapeño and let your mouth party like your stuck at home for the next month or so 🤙
CYRUS BOLOOKI - NEW FOUND GLORY
SHEPHERD’S PIE
Ingredients: Ground Beef (or turkey, or chicken, or any kind of meat for that matter) Onion, diced (optional) Frozen veggies (1 bag of pretty much anything you have, normally a carrot/corn/peas mix, but seriously, anything will do) Worcestershire Sauce (optional, but check the back of your cupboard because you probably have a bottle that’s been sitting there for years and is still good!) Potatoes (again, any kind of potatoes will do) Cheese (cheddar is the standard, but use what you have!)
Instructions: Cook your meat in a skillet, seasoning with salt and pepper and adding diced onion if you have while cooking.
Cook/microwave your bag of frozen veggies and add directly into the meat and stir.
Now’s the time to find that Worcestershire sauce if you have it -- if not, don’t worry, this is awesome without it too!
Add a cup of cheese in there and also 1/2 cup of liquid (could be water, could be chicken/beef broth if you have). Stir to combine all ingredients and turn to low heat to keep warm.
Meanwhile, make mashed potatoes however you can (whether by hand or with a box) and when done layer these two things in an ovenproof dish — meat/veggie mix on bottom, mashed potatoes on top.
Toss cheese all over the top of that and throw it in the oven on medium heat for 20 minutes to melt the cheese.
Now, sit back, relax and enjoy your dish whether with family or all alone. It’s a full meal all in one, tastes even better the next day and you can even freeze it!
BRANDON SALLER - ATREYU
WINNER WINNER ISOLATION DINNER (Crispy Baked Chicken Thighs)
Ingredients Bone-in chicken thighs w/ skin Salt (coarse salt works best but any will work fine) Pepper Garlic powder Mixed herbs or Italian seasoning Desired veggie - Whatever you have (ie broccoli, green beans, asparagus, zucchini) Italian dressing (your favorite)
Instructions Preheat oven to 400º
Pat dry chicken on both sides with a paper towel
Season both sides of chicken liberally. Especially the top. The key to this chicken is the well seasoned crispy skin.
Place on sheet pan and roast in oven for about 40 minutes. You are looking for the chicken to be cooked through and skin to be browned and crispy.
When chicken has about 20 minutes left, put marinated veggies on a sheet pan and roast until chicken is done.
When finished, let chicken rest for about 5 minutes as it just came out of a 40-minute fiery hell and will 100% burn your mouth.

Ingredients 1 bag of chopped romaine 1 can of black beans 1 frozen bag of white or brown rice 1 cup of frozen corn (thawed) Soyrizo (or any type of ground meat) 1/2 bell pepper 2 Roma tomatoes 1/3 yellow onion 1 avocado Cilantro 1 lime Taco sauce of your choice Cilantro dressing (or something comparable) Diced jalapeños Shredded Mexican cheese Handful of tortilla chips
Instructions Dice the bell pepper, yellow onion and Roma tomatoes
Chop a handful of cilantro
Thaw corn in microwave
In a small pot heat up the can of beans
Cook the soyrizo or other meat in a pan at the same time (if you are using meat you will need to season to your liking)
Heat rice in microwave (if using uncooked rice have it ready before everything)
Grab a big bowl and put rice down. Add the cilantro and lime and toss together
Now add everything else however you want. Remember this is a completely fluid meal, add or takeout any ingredient you feel. Get creative with it! DON’T FORGET TO ADD THE AVOCADO AND SAUCES!!

HERBIE’S HOMEMADE CHICKEN TAQUITOS
Servings: 12 Calories: 241 Prep time: 20 min Cook time: 20 min Total time: 40 min
Ingredients 3oz cream cheese 1/4 cup salsa of your choice 1 tablespoon lime juice 1 1/2 teaspoon of taco seasoning 2 fresh cloves of garlic, minced 3 tablespoons cilantro or parsley 2 scallions diced 2 cups shredded cooked chicken or whatever protein you desire 1 cup Mexican blend cheese or whatever you want 12 6in flour tortillas Cooking spray Kosher salt
Instructions Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
In a large bowl, mix together the cream cheese, salsa, lime juice, taco seasoning, garlic, cilantro, and scallions until well combined and creamy. Add in the cooked chicken and cheese; stir to thoroughly combine.
Working with a few tortillas at a time, heat them in the microwave between two paper towels until they are soft enough to roll (about 10 seconds).
Spoon 3 tablespoons of the chicken mixture onto the lower third of a tortilla. Roll the tortilla tightly.
Place the rolled tortilla seam side down on the baking sheet. Repeat with remaining tortillas until the mixture is gone, making sure the taquitos are not touching each other.
Spray the tops lightly with cooking spray and sprinkle with a little kosher salt (don’t skip the salt!)
Bake for 15-20 minutes or until crisp and golden.
Serve with salsa, sour cream, or guacamole.
BALSAC THE JAWS 'O DEATH - GWAR
I offered up my recipes for Feline Fricassee and Poodle Wellington but my publicist informed me that things hadn't yet gotten to the point where most people are ready to eat their pets. Instead, here is a recipe that you should be able to throw together without having to take that dreaded trip to the supermarket.
Now more than ever, everyone should be able to hunt and kill their own food. So the first thing you will need to do is grab your favorite battleaxe, knife or shotgun and go in your backyard. Look for the happy yellow flowers that are probably taking over your poorly manicured lawn. Pick as many of these as you can find, making sure to pull them out from the roots keeping the long dark green leaves intact. You may be asking, “What do I need this shotgun for?” The weapon is in case your neighbor sees you and tries to shake hands!
DOOMSDAY DANDELIONS
Ingredients Dandelion greens 1/2 cup olive oil 3 tablespoons vinegar (red wine vinegar or balsamic work best but whatever kind you can find in your cupboard. It is the apocalypse after all) 1 tablespoon mustard (Dijon if you've got it but who am I kidding, you only have that horrible yellow crap!) 2 cloves garlic minced Salt and pepper 2 teaspoons dry herb (use whatever you can find. What are you saving that stuff for?)
Instructions Pick the flowers off the dandelion greens (these are edible too, I suggest beer battering them and frying them, but that's another recipe and I'm not getting paid for this).
Trim the hairy roots from the greens and discard.
Wash all the dirt from the greens, cut them in half at the base keeping the leaves attached and soak in clean cold water.
Wisk all other ingredients together until they are a cohesive solution.
Drain and pat dry the greens and dress them with the vinaigrette.
Enjoy by yourself!!
SCHUYLAR CROOM - HE IS LEGEND
VEGGIE PASTA WITH VEGAN ASS WHITE SAUCE
Ingredients 1 medium onion chopped 3 cloves of garlic Red bell pepper julienned Broccoli florets Mushrooms sliced thin Zucchini halved and sliced Yellow squash quartered and sliced 1 or 4 splashes of white wine
Finisher Sauce 1/4 cup of unsweetened oat milk 1 or 2 tbs coconut oil 1/4 cup vegan mayo A few handfuls of vegan cheese (I used a vegan pepper jack by Daiya and a bit of Follow Your Heart Parmesan) 1/3 cup of Nutritional yeast Fresh basil
Herbs and Spices Kosher Salt Fresh ground pepper Herbes de Provence Some other optional shit
Pasta Fettuccine noodles ( I like that Ancient Grain in the blue box.)
Instructions Boil salted water for your noodles and in a separate pot boil a few cups of water to blanche your broccoli. You’ll be mad if your water is not boiling before you start sautéing your veg... that shit goes quick, watched pots never boil.
In a large saucepan over med/high heat: Sauté onion for about 5 minutes until it is soft and almost translucent. Add chopped garlic until that smell wakes up your girlfriend. Boom you’re cooking. Salt and pepper that junk.
Add the peppers, mushrooms, zucchini and squash, hit it with some more salt and pepper. I like to throw in some Herbes de Provence and a TINY SPRINKLE of cayenne (a little goes a long way) plus some truffle salt because I’m fancy.
By now the lil pot should be boiling. Throw those broccoli guys in there and when they turn dark ass green drain them and throw them in the pot with the other veggies.
Shit’s all steamy now. It smells crazy good. Your girlfriend and your dog are in the kitchen salivating.
Hit those veggies with some white wine. I say a few dashes, but you’ll know. You’re gonna want to let that cook off for 3-5 minutes.
Maybe you’ve already put your noodles in. If so, they’re ready to drain. If not, get to it 9 minutes after the water starts boiling again (read the box)
Now your noodles are in the strainer. Make your partner divide that into bowls.
After the wine has cooked off, add the veganaise, coconut oil, vegan cheeses and the nutritional yeast and stir all of that up until melty and gooey and combined with the veggies. I like the throw in about half a cup of chopped sliced basil and leave a little for a garnish after you’ve topped your pasta with this creamy ass veggie goodness.
OH! Pro tip: Garlic bread. (Do this 40 minutes ago before starting anything else.)
Take 2 heads of garlic and peel most of the skin off but leave bulb intact.
Chop the very top of the head off the garlic to expose the clove (like 1/16 of the top).
Place it in tinfoil and close it up around the sides. Douse with a generous amount of olive oil and salt and pepper all over that opening on the bulb and close the foil up tight around the top. Create a little oven inside your oven.
Bake at 375 for 40 minutes. You’ll smell it.
Let it cool well.
Toast a loaf of French bread.
Those little garlic cloves will pop out like little teardrops of pure heaven. Smear that junk on your toasted bread and thank me later. The oil is now roasted garlic oil. You could drizzle that on the bread too or over the damn pasta that’s in the bowl.
(Be careful. You will want to skip the steps of letting the bulbs cool. They are unforgivingly hot and will burn your flesh.)

Cold Canyon- Saison
This is the fourth batch I’ve brewed of this recipe as I try to hone in on my ideal saison. The most recent change I’ve made, which is a big one, is to switch the yeast strain from Wyeast’s French Saison 3711 to their Belgian Saison 3724. I’ve brewed a couple batches with 3724 and although I’m still getting a handle on this yeast I am really happy with it so far.
I fell in love with 3711 at the first brewery I worked at, it was our go-to for saison and we even brewed our witbier with it. Back then I found 3711 to give a super clean profile with a great balance of punchy fruitiness and spice without being too “hot” with alcohol or muddled like a lot of other saison yeasts. When fermented on the cooler end we found at the brewery that 3711 created a unique orangey spice. People swore that we put orange zest and coriander into our witbier when in fact it was all yeast character they were tasting. When I started doing trials of this saison recipe I started with 3711 but after a few batches was getting a completely different character out of it. Each batch had this astringent bitterness to it that was like a combination of rust and soil. I wasn’t sure at first if what I was tasting was hop-related or perhaps an unhealthy yeast pitch, but after a few batches and some research I decided what I was tasting was the “phenolic bite” that is said to come from certain saison yeast strains. Still haven’t figured out why the character I got from 3711 is so different than how I remember it from a few years ago at the brewery, but at any rate I decided to move on from it.
I had started looking into a new yeast to try when I was out at one of my favorite bars in LA, The Hermosillo. The Hermosillo is the original home to Highland Park Brewery, probably the best brewery in LA, and in addition to HPB beers always has an awesome selection of guest beers which often includes a saison or mixed culture beer from Perennial Artisan Ales from St. Louis. I had a glass of Perennial’s Prism, a dry-hopped saison, and immediately knew that whatever yeast they used in it was exactly what I was looking for. Prism had a great balance of yeast fruitiness and spice that worked well with the heavy hopping and a unique mouthfeel that softer that most saison. From Perennial’s website (http://www.perennialbeer.com/beer-lister/) I found that they use a Belgian saison strain so I took a chance with Wyeast’s option (https://wyeastlab.com/yeast-strain/belgian-saison).
After a few brews with 3724 I am fairly confident that it is indeed the yeast that Perennial uses in Prism. I’m pretty happy with the results so far. I might not be completely sold as it is a bit finicky. The yeast tends to stall out in the 1.020-1.030s halfway through fermentation. It will eventually finish out but it takes some time and/or warming the beer into the 90s Fahrenheit. 3724 also seems to land at a higher FG than other saison yeasts I’ve brewed with. I’ve read it does get down close to 1.000 but I haven’t seen it get that far. (Rather I haven’t been patient enough to see it get that far). But maybe the attenuation will improve as I harvest and re-pitch it a few times.

.5 tsp Calcium Sulphate and 1.5 tsp Calcium Chloride into 6 gallons strike water
Yeast:
Wyeast 3724 (2nd Gen)
2 Liter starter. Stirred 48 hours. Refrigerated overnight and decanted. Yeast “bloomed” on brew day with first runnings.
Grist:
Weyermann Floor Malted Bohemian Pilsner Malt- 6 lbs (55%)
Weyermann Pale Wheat Malt- 3 lbs (27%)
Flaked Oats- 2 lbs (18%)
Raw Organic Honey- 1 lb at end of boil
Boil: 60 minute
Magnum Hallertauer (13% aa) - 1 oz @ 60
Magnum Hallertauer - 1 oz @ 15
Wildflower Honey - 1 lb @ 10
Mash pH: 5.17
60 min O2 through aeration pump. Pitched yeast and put in fermentation chamber at 77F with no temp control on it (free-rise)
OG: 1.046 - pH 5.07
FG: 1.012 - pH 3.8 (as I mentioned before, could probably have waited for the yeast to attenuate more fully but the beer tasted clean so I decided to keg as I’m under quarantine and NEED BEER)
Kegged 3/30/2020 w/ ~2oz ground coriander
Notes:
4.5% ABV
Super aromatic, coriander and cinnamon.
Silky mouthfeel, soft on the palette, 3724 give a super unique pillowy-marshmallow-like sweetness that balances well with the spicier notes it also creates.
Overall I’m stoked on this beer as a base saison to continue tweaking. "Farmhouse” (whatever that means) styles are my current brewing obsession. Specifically the lower ABV, refreshing, rustic, I’m about that shit. I feel like the best farmhouse beers have a level of flavor and complexity from letting yeast do it’s thing in combination with adjuncts like wheat and oats, and plenty of hop flavor, that you don’t find in other low ABV styles. To me this beer drinks almost like a dry white wine or cider and as it warms in the glass it just becomes more aromatic and punchy.

Been playing with the visual component of beers more lately. Above is something I threw together with this one as I was first tasting it. Something about the smell and mineral flavor of the beer makes me think about winter, COLD AIR, throat chilling humidity, crunchy frozen grass under your feet, river rocks. Thought it was a funny play on the stories about farmhouse beers that they were traditionally low ABV refreshing beers made for the farmworkers in rural Europe. Always thought that was a dope visual. A bunch of tired farmworkers cresting a hill on the way back to the barn at the end of a hot summer day. Sitting down in the shade and tapping a wooden cask of crisp, rustic saison. Imagining how satisfying that would be. With Cold Canyon I’m picturing a solo creekside walk in the afternoon in the dead of winter. The sun is about to set and the ground begins to freeze agin after only having thawed a couple hours prior. You sit on the one dry rock you can find by the barely flowing, almost entirely frozen creek. Pull out the thermos you packed this morning and pour a portion into the lid. It foams and crackles with carbonation despite having sat in your bag all day. It’s colder on your lips now than it was out of the fridge that morning. A light breeze blows through the bushes nearby and as you take your first sip a waft of floral aromatics from the only remaining live blossoms around for miles hits your nose. A perfect moment of solitude.
