*White butter* Recipe: Ingredients - 2-3 cups of cream/malai (one may collect cream as the top layer of milk and refrigerate it), 1/2 cup water, salt or pepper (optional) Method - 1. Once you have collected the cream, take it out and put it in a container to be blended. 2. Add little water and use blender and keep blending. 3. Initially the cream will become smooth and take the form of smooth whipped cream. 4. Continue the blending/mixer, until you see buttermilk and thick butter gets separated. 5. With a spoon collect the white butter in an air-tight container and store it in refrigerator. 6. You may also strain the butter from the buttermilk with a strainer. 7. One may add salt and pepper to change the taste. Serve it with paranthas or in dal or gravies to enhance the taste. *Filling of Aloo parantha* Ingredients - 2 medium sized potatoes, salt to taste, 1/2 green chilli (chopped), 1 medium sized onion (chopped), 1/2 tsp ajwain, 1/4 tsp red chilli powder, 1/2 tsp coriander powder, chopped coriander leaves. Method - 1. In a cooker put washed potatoes and pour water just to cover the potatoes. 2. Close the cooker lid and let it cook on slow flame for 2 whistles. Let the steam out by itself. 3. Once steam is out, throw away the water and pour some cold water. Peel of the cover of potatoes and mash these potatoes in a separate container. 4. In the bowl having potatoes, add chopped onion, green chillies, and coriander leaves. 5. Now add salt, ajwain, red chilli powder, coriander powder. One may also add anardaana (1/2 tsp). 6. Mix it all well.
