I feel like it initially started out of spite because when I started to read spones fanfics, I didn't start with new ones, but I actually searched for old ones, so some of the first fics I've read were from early 2000s (or even earlier, one of my fave fics was written in 1988), and in the summaries and even in Tempest's manifest, it was mentioned how a lot of fans didn't think McCoy would handle a mating bond with Spock, that he wouldn't be able to handle telepathy (on the other hand some fans thought the opposite).
So when mirror!Spock was like: "I shall not waste time with you. You're too inflexible, too disciplined once you've made up your mind. But Doctor McCoy has a plenitude of human weaknesses, sentimental, soft. You may not tell me what I want to know, but he will." and also thought about the moments when Spock mind melds with Kirk, which is literally mostly just when Kirk's suffering from amnesia*** (The Paradise Syndrome) and thinking about how Kirk's mind was able to overwhelm Spock's, I decided to headcanon that Vulcans prefer beings who are not disciplined enough. It's less draining for them. (Obviously, there's also the thing where I'm biased and like McCoy/Spock over Spock/Kirk, so...)
And to most telepaths, McCoy's mind feels open and welcoming, but it also makes him easily influenced. But his mind is also exceptionally strong and he can handle telepathic intrusions.
*** Spectre of the Gun, The Enterprise Incident, Requiem for Methuselah, Turnabout Intruder aren't true mind melds in my opinion. The first three are, I guess, mind manipulations, the last one is just a touching of the mind's surface. I just like to headcanon that there are different types of Vulcan abilities and not everything is called "mind meld"
