This potato salad happened because I bought the most gorgeous Chinese chives. I served it with some grilled salmon and coleslaw. I used all-purpose potatoes because I didn't have the small red ones. Also - if you can't get Chinese chives, use regular chives or green scallion tops. Potato Salad with Chinese Chives 2 pounds small red or all-purpose potatoes lightly salted water 1/4 cup chopped Chinese chives 3-4 tablespoons olive oil 1-1/2 to 2 tablespoons white wine vinegar chopped fresh oregano, parsley or thyme or a mixture salt and freshly ground black pepper to taste Place the potatoes in a saucepan, cover with lightly salted water and bring to a boil over high heat. Lower the heat and simmer for 15-20 minutes or until tender. Drain the potatoes under cold water and peel them. Cut the potatoes into bite-size pieces and place in a large bowl. Add the chopped chives. Pour in 3 tablespoons of the olive oil and 1-1/2 tablespoons of the vinegar and toss ingredients gently. Add the herbs, salt, and pepper. Toss gently. Let rest at least 1 hour before serving. Add more olive oil and vinegar if needed.
