Salted Chocolate Chip Cookie Baklava
As a Cowboys fan struggling to determine my allegiances during yesterday’s Packers-Giants game, I was forced to reconcile the following pieces of information:
1. The winner would go on to play Dallas in the Divisional Round of the playoffs this coming Sunday.
2. This year’s Cowboys are 1-0 against the Packers and 0-2 against the Giants, with those two losses being the only meaningful ones the team suffered all season.
3. Aaron Rodgers is not of this world and all teams, especially one with a pass defense as weak as Dallas’s, should live in perpetual fear of playing him.
4. I hate the Giants.
5. My husband, Jason, is a Giants fan.
6. My NFL husband is Rodgers, as has been documented in this space . I just googled to see who has seniority, and it turns out that Rodgers started his first NFL game within a week of when Jason and I started dating, which is just weird.
Ultimately I decided to root for Green Bay, with the tiebreaker being that I was more emotionally equipped to handle a loss to the Packers than to a loathed division rival, not to mention the added stress of anticipating and living through an intra-Jethany playoff contest. Of course, this is the ultimate be careful what you wish for situation, and now I have to deal with this.
Speaking of decisions that seemed like a good idea at the time, when salted chocolate chip cookie baklava won last week’s walnut poll in a landslide, I concluded that the recipe’s suggestion to use frozen phyllo dough was for suckers and that I had to at least attempt to make the dough from scratch.

Because this was my first foray into the world of phyllo, I left plenty of time to buy frozen dough if needed, just in case my efforts were a miserable failure. Friends and family members said I was crazy for even trying. All those paper-thin sheets of dough? On your tiny countertops in your tiny Brooklyn kitchen? But I was not to be discouraged.

It actually turned out not to be an especially difficult task - just time-consuming. I had basically resigned myself to spending my entire Friday night on this, and that’s more or less what happened. I had made the dough the night before, which only took a few minutes, but rolling it out, including all the buttering in between each layer, probably took somewhere between two and three hours. (I also had to make the cookie dough, which I did as a break in between the first two sets of rolling, and which probably added 20 minutes or so.)

Your mileage will vary on whether it’s worth it to make the phyllo yourself. If time is of the essence, or you just don’t feel like standing for three hours straight, you would lose nobody’s respect by resorting to the frozen stuff. (I also have no idea if there’s a taste/texture disparity, since I have nothing to compare to.) But if you have the time and want to try a baking project, I recommend this as a relatively attainable one.

Salted Chocolate Chip Cookie Baklava
Adapted from Half Baked Harvest and Food.com
Ingredients
Cookie Dough:
4 large eggs 2 teaspoons vanilla extract 3/4 cup packed brown sugar 1/4 cup granulated sugar 1 cup all-purpose flour 3 sticks (1 1/2 cups) unsalted butter, softened 2 cups semi-sweet chocolate chips 1 cup shelled pistachios, roughly chopped 1 cup raw walnuts, roughly chopped (for financial reasons, I used 2 cups of walnuts and no pistachios)
Phyllo Dough:
4 cups flour 1 teaspoon salt 1 1⁄3 cups tepid water 1⁄4 cup olive oil (Alternatively: 1 pound of the frozen stuff)
+2 sticks (1 cup) unsalted butter, melted, for spreading between layers
Vanilla Simple Syrup 1 cup water 1 1/2 cups packed brown sugar 2 tablespoon vanilla extract 1 vanilla bean, spit in half and seeds removed (I skipped this and added an extra teaspoon of vanilla extract)
Topping:
1/4 cup semi-sweet chocolate chips or baking chocolate, melted flaked sea salt, for sprinkling
Directions
Cookie Dough:Beat the eggs in a large mixing bowl on high speed until foamy (you can also do this manually, using a whisk). Beat in flour, granulated sugar and brown sugar until smooth. Add the 3 sticks of softened butter and vanilla extract, and beat until smooth and creamy. Stir in the chocolate chips, pistachios, and walnuts.
Phyllo Dough:
Sift flour and salt into a mixing bowl and add the water with oil. Stir until forms soft dough, then knead in the bowl about 10 minutes. Dough will feel sticky at first, but kneading, it should develop into a dough that becomes smooth and satiny.
When well mixed and smooth, wrap pastry in plastic wrap and leave it to rest at room temperature about one hour. If not all the dough is being used right away, wrap the unused portion and keep chilled in fridge up to a week.
Bring to room temperature before using.
Divide the pastry into 24 equal portions, shaping them into smooth balls. Cover with a cloth, except the one you're working with.
Take a ball of dough, and shape it into a square or rectangle. Place it on a lightly floured surface, and roll into a 6 inch square using a rolling pin. Dust again with flour.
(Note: the following paragraph requires a dowel, which I did not have. I just kept using the rolling pin, doing half-turns every few times, until the dough was as thin as I wanted it to be and the correct size to fit in the 13x9 pan. But I think below is technically the correct method.)
Take a dowel, place on one end of the pastry, and roll neatly onto the dowel, pressing firmly as you do so. Keep hands on each side of the pastry. Unroll the pastry and dust the work surface and pastry with a little flour, and roll up again from opposite side as before, exerting pressure as you go. Unroll carefully. After second rolling, the pastry should be about 10x12 inches. Using the back of your hands, place them under the pastry and stretch gently, moving hands to keep it even, working toward the edges. The edges can be given a final stretch with the fingertips. 
Spread some melted butter on the bottom of a 13x9-inch pan, and place a layer of dough into the pan. Brush the pastry with more melted butter. Repeat for a total of 8 layers, brushing each piece with butter before adding the next. Gently spread 1/2 of the cookie dough over the phyllo dough (the layer will be somewhat thin). Layer 8 more pieces of phyllo on top, brushing each with butter before adding the next. Spread with the remaining half of the cookie dough. Now add the third and final layer of phyllo dough. Layer on 8 pieces of phyllo right on top, brushing each with butter before adding the next.
Cut into the baklava to make strips, about 1 1/2 inches wide. Then make diagonal slices, about 1 1/2 inches apart, to create a diamond pattern. Bake at 350 until golden, about 45 minutes to 1 hour.
Meanwhile, make the syrup. Add the water, brown sugar, vanilla, vanilla bean seeds and the vanilla bean pods to a medium sauce pot. Bring the mixture to a boil, reduce the heat to medium and cook for 10 to 15 minutes. Remove from the heat and remove the vanilla bean pods. Pour the syrup over the warm baklava and let soak, for at least 6 hours or overnight (I covered my pan after about 2 hours of cooling with plastic wrap). When ready to serve, drizzle each piece with melted chocolate and sprinkle with sea salt.

In the Hudson Valley, Abracadabra Magic Farm is a 66-acre self-sustaining organic farm with a majority of wooded areas. It offers holistic seminars, kambo medicine, rituals, farm-to-table pop-ups, and camping.
Up to 100 guests can attend your special events in our green house.
All year long, we are looking for volunteers to help with the garden, hens, medicinal herb gathering, construction of the outdoor kitchen, landscaping, and adobe building.
We are in Coxsackie, 22 minutes from Albany, the Catskills, and the Hudson River.
There are buses to the Catskills and Albany, where pickup is available, as well as trains to Hudson. Without traffic, it takes two hours to drive from NYC.
