What is a 'perique' some one asked me yesterday? I simply took the word Peri and ad que from bar-b-que = Perique which happens to be the name of a really expensive tobacco - talk about not reinventing the wheel. 😂 😂 - Any who's, Chef Marcelle version of ‘Perique’, Peri-Peri chicken, marinated overnight in our tamarind Peri-Peri sauce and then flame broiled to perfection.
