Penang Hookien 🍜 Noodle/ Prawn🍤 Noodles/ Hae Mee.

Singapore Prawn noodles: sweet prawn broth serve with pork rib and/or large prawn, chilli powder on the side.
Penang Hokkien Noodle: rich, thick spicy prawn broth, serve with boiled eggs, small shrimps, slices of lean pork and chilli paste paste on the side.
Mrs. Yeo’s Prawn Noodles: best of the both world=Penang’s spicier version plus Singapore’s large prawns and pork ribs.
Ingredients:
Soup/Stock: A lot of prawn heads and shells 1kg pork ribs (parboiled) 5 cloves garlic (chopped finely) 5 cloves 2.5L water 2 star anise 100g anchovies/ikan bilis 100g dried shrimp Salt to taste Fish sauce to taste Some white pepper Some oil
Chili paste: 30 dried chilies (remove seed and soaked to soften) 10 shallots (peeled) 6 tbsp cooking oil 5 cloves garlic (peeled) 2 tbsp of water
Noodles: 150g yellow noodles 100g rice vermicelli Some kangkong (cut into sections) Some beansprout
Toppings: Prawns (deveined and shelled) Fried shallot (I used store bought)
Method: 1. Blend ingredient for chili paste in blender until smooth. Heat up some oil in a pan/pot and stir fry blended chili paste until it turns dark red, about 15 to 20 minutes. Set aside.

**The dried chilies in the picture had not been soaked. Soak dried chilies in water for about 30 minutes then remove seed before blending). Please also make sure you wear gloves before handling dried chilies. you don’t want to have burning sensations on your hand for the rest of the day (i learned that the hard way)

2. In a large pot, add oil over medium high heat, add garlic and all prawn heads and shells to stir fry until they turn red. Add anchovies and dried shrimp, star anise and clove. Continue to stir fry for about 5 minutes.

**at this point of time, I realized that my pot is not large enough to accommodate all the other ingredients hence i had to transfer everything to a larger stock pot. make sure you use a pot that is at least 5L or more.
3. Add water, pork rib and white pepper. Bring it to boil then turn heat down to simmer for about 2 hours or more.

4. Take pork rib out, set aside. Strain stock and transfer stock to another pot. Skim and discard the foamy top layer or stock.

5. Bring stock the boil again, blanch prawns in stock for about 1-2 minutes and set aside.
6. **Add chili paste to stock little by a little until you reach desired taste or spiciness. (I made the soup stock child friendly hence i didn’t add any chili paste to the soup stock, instead i served it on the side. However, Penang Hokkien Noodle is originally spicy) Adjust taste with salt and/or fish sauce.
7. Blanch yellow noodles, vermicelli, kangkung and beansprout in another pot then transfer to bowl. Top with pork ribs, prawns and slices of eggs. Ladle soup over and sprinkle fried onion.
8. Serve hot and with more chili paste on the side.
9. Done!
p/s: In Penang, hokkien noodle hawkers would traditionally blend all the prawn heads and shells to extract all the flavors but I’m just too lazy. As long as you have plenty of heads and shells plus simmering the stock for 2 hours or longer, it’s good enough.
