Jen Notes: Adrenal Fatigue, Chapter 13C
The book I am reviewing currently is Adrenal Fatigue; The 21st Century Stress Syndrome by James L. Wilson. This is chapter 13C on Food.

Fruit
People with adrenal fatigue and blood sugar problems should go lightly on fruits, especially in the morning. Exercise early in the day can make it possible to have small amounts of fruit, because the exercise elevates the cortisol and aldosterone levels, which increases tolerance for fruit. But if tiredness or foggy thinking increase, then fruit in the morning should be eliminated.
The pesticides on fruit can be very dangerous for those with adrenal fatigue, so organic fruit is recommended. If you cannot find organic fruit then soak in water with bleach (I would not do this one) or use a vegetable wash to remove chemicals.
Preferred fruits are papya, mango, plums, pears, kiwi, apples, grapes and cherries. Fruits to avoid include bananas, raisins, dates, figs, oranges, and grapefruit.
Fats and Oils
Those with adrenal issues often crave fats and oils because it makes them feel better. According to Dr. Wilson, fats should not be more than 20-25% of the diet. (I disagree with this based on my research; it could easily be up as high as 60% with no negative effects.) It is important that those fats are good quality fats with essential fatty acids.
Saturated fats include butter, coconut oil, palm oil,cocoa butter, and lard. . Saturated fats do not get damaged by heat and so are the best for cooking and baking. (They should not be reused.) 
Monounsaturated fats include olive oil.  It can be used for low heat cooking, but should not be used for high heat or lengthy cooking. Rapid stir frying, and sauting are acceptable ways to use olive oil.
Polyunsaturated fats include canola, peanut, and safflower oil. They should not be used for cooking as they are much more unstable. They can be added after something is cooked or used in salad dressings. They get rancid much more quickly than other oils.
Deep fried foods should be avoided as they are difficult for those with adrenal fatigue to handle.
Essential Fatty Acids
Non-essential fatty acids are those the body is able to make itself from other fats and oils. Essential fatty acids are those we must get from food, because our body is not able to make them. There are 2 types of EFA’s, alpha-linolenic and linoleic. The first group belong to the Omega 3 group of fatty acids and include salmon, sardines, walnuts, flax seeds and lesser amounts, dark green plants.  The second group are the Omega 6 group and include sesame, sunflower, safflower, and corn. Both groups are needed for good health.
When buying these oils, buy in small quantities becausethey are unstable and can go rancid easily. 
The best balance of fatty acids is 4:1 of omega 6 to Omega 3. A tbsp of flax seed oil with 1 tbsp of sunflower or safflower oil daily will be a big boost to your health. Other important considerations are to buy only fresh, raw, cold pressed oils and to keep them in the cold. Eat cold water fish like salmon for omega 3  oils. Avoid all hydrogenated oils. Avoid deep fried foods and eat less fried food only occasionally.
Seeds and nuts are also sources of essential fatty acids.  These include raw sesame seeds, raw pumpkin seeds, raw sunflower seeds, and raw flax seeds. They also include the following raw nuts: cashews, filberts, almonds,brazil nuts, macadamias, fresh coconuts, walnuts, peanuts, and chestnuts. All seeds and nuts should be stored in the freezer to keep them from going rancid. Avoid nuts that are commercially roasted or deep fried as they will most likely be rancid and are destructive to the body.
The oils with essential fatty acids are very unstable and should be not used for cooking.
The 9 rules for what to eat
Eat a wide variety of whole, natural foods.
Combine a fat, protein, and carbohydrate with each meal.
Eat lots of vegetables.
Salt your food as desired.
Use whole grains as the starchy carbohydrate source.
Combine grains with beans, seeds or nuts to make a complete protein.
Avoid fruit in the morning.
Mix 1-2 tbsp of essential oils into food daily.
Eat high quality food.
Percentages recommended of foods are 30-40% vegetables, 30-40% whole grains, 10-15 % beans, seeds, and nuts, 10-20% animal foods, and 5-10% fruits.
