Weather turned cooler again and we have one of our favourite comfort foods tonight - Bulgur and lentil pilaf with caramalised onions or Mercimekli Aş, as it is called at my home town, Antakya, Turkey🇹🇷(meals cooked with bulgur generally called Aş in southern Turkish cuisine). This delicious, wholesome dish has many variations throughout the Levant and Middle East – The Middle Eastern version, Mujaddara, is generally made with rice rather than bulgur, love that too❤️
The sweetness of the caramelized onions complements the lentils and bulgur really well here. I like to serve it with spicy pickled peppers and/or a green salad with a sharp lemon juice and olive oil dressing, like this Shepherd’s Salad; they complement the pilaf wonderfully. Easy, healthy and delicious, this pilaf can be kept in fridge for 2-3 days. It tastes even better the next day.
Serves 6-8
225gr/8oz/1 cup green lentils
350gr/12oz bulgur wheat, rinsed
15ml/1 tablespoon mild olive oil
750ml/ 1/4 pints/3cups hot water
Salt and ground black pepper to taste
To serve:
1 onion, halved and thinly sliced
45ml/3 tablespoons mild olive oil
Pickled green and red peppers
Boil the green lentils in a heavy pan with plenty of hot water for about 15 minutes. Drain the water and set the green lentils aside.
Combine the half cooked green lentils and rinsed the bulgur wheat in a heavy pan. Pour in the hot water and olive oil. Season with salt and pepper to taste and stir to combine thoroughly. Bring to boil for 1-2 minutes, and then reduce the heat. Cover and simmer until all the liquid has been completely absorbed (about 15 minutes).
While the pilaf is cooking, heat the olive oil in a pan and stir in the onion slices. Over a medium heat, cook the onion slices for about 10-15 minutes until they start to get caramelized, stir occasionally. Season with salt and pepper to taste.
Serve the bulgur and green lentils pilaf with the caramelized onion slices over the top. Spicy pickled peppers or a green salad with a sharp lemon juice and olive oil dressing!

We love beetroot, pancar, as we call in Turkish and I have been making this delicious baked beetroots with garlic, walnuts, pomegranate molasses dish a lot recently. It makes a wonderful meze, also accompanies pasta, rice and grills beautifully.
Pomegranate seeds over top adds a lovely layer of freshness, and it stays well in the fridge covered, 2-3 days. As a variation, you can enjoy over labneh or strained yoghurt too!

Recipe for Aubergine/eggplant and meatballs kebab, Fırında patlıcan kebabı, enjoy this delicious all in one bake al fresco, with some cool Cacık dip of yoghurt, cucumber and dried mint at a side.👌🏻
I love the ease of prepping this all in one, southern Turkish style dish. Please make sure to sprinkle salt over the aubergine slices and squeeze out their excess moisture with a paper towel. Then simply coat olive oil and seasoning over the aubergine slices. There is no need to sauté or fry the aubergine slices and the meatballs before baking. They bake all together very well, infusing their flavour to one another. You can prep this dish ahead of time and freeze leftovers successfully.
The meatballs in this recipe is based on my Turkish baked meatballs with vegetables, Firinda Sebzeli Kofte recipe, from my cookery book, Ozlem’s Turkish Table, another version of this delicious all in one bake.

Oruk, içli köfte, kibbeh, koupes - I love them all. This was a special Oruk from my home town Antakya, that we enjoyed during an extended family gathering in Istanbul, thanks to my dear sister @oznursoyen ❤️
Making oruk, our version of baked kibbeh was always a grand event at home; I grew up watching my grandmother and mother making this special treat with family and friends gathered around a big table in Antakya. Some would make the filling, some to prepare the bulgur dough and some to do the stuffing. Since there were no food processors around in those days, they would ground the meat and bulgur with hand held machines. There were lots of kneading and mixing involved and since they would make vast amounts to share and it would almost take a day for this feast to get ready. A lot of effort, but well worth it.
You can prep the filling a day in advance, if you have a limited time. The filling anyway needs to be cool and this really helps with spreading the work (the filling with lots of onions, parsley, walnuts and ground meat is so delicious, any left overs make a great topping over pasta or rice too). To keep the bulgur dough stay intact, for us, Semolina is the key; it works great as the binding agent in the bulgur dough. You also need to have water aside and continuously wet your hands while shaping the dough. Ground meat that goes in the bulgur dough needs to be extra lean and double ground (you may ask your butcher to do this for you or you can pulse the ground meat in your food processor a few times). You may also prepare the easier Sini Oruk; tray baked bulgur spread with ground meat and stuffing in the middle. They are both very special treats at the end, quite a sacred food for me and worth all the effort.

Getting ready for a private hands on Turkish cookery class today; it really is wonderful to be able to teach in person classes again.
This Vegetarian Pide with cheese, spinach and peppers is amongst the recipes we will be making at the class. Pide is one of the most popular snacks and our slow cooked “fast food” in Turkey. In Rural Anatolia and at my home town Antakya, locals would prepare the filling for various flatbreads and take it to their local bakery, fırın to be baked. There are also “Pideci” , Turkish flat bread shops that solely bake and serve these flat breads. Great value, delicious and nutritious, we can’t get enough of pides.
Pide is fun to make and easier than you think; I will share some Pide shaping videos on my stories, I hope they help and inspire you to have a go.

Friends coming over and Spinach and cheese filo pie, Ispanaklı peynirli börek, ready, freshly out from the oven ❤️ We love börek, savoury pies; growing up, we always had some form of börek for brunch, afternoon tea or as part of supper, now it is one of my children’s favourite snacks too.
I used chopped fresh spinach leaves and cheese in my filling (no need to cook spinach ahead); you can use any veg that needs finishing; grated courgettes, aubergines, leeks, mashed potato and cheese, Swiss chard make delicious fillings too.
Once cooked and cooled, you can slice, wrap with foil and freeze - you can then reheat successfully at 180C/350F for 8-10 minutes.

Aubergine kebab with meatballs, Patlıcan kebabı for us tonight❤️; this is a delicious southern Turkish specialty and I love the ease of it. Patlıcan/aubergine/eggplants , meatballs and all the veg are baked together with no need to initial sauté or baking. I like to coat the aubergine slices with a little olive oil, salt and pepper and then do the layering as here.
The meatballs are based on my Baked Turkish meatballs with vegetables casserole recipe at my cookery book, #ozlemsturkishtable - I copied this recipe at my profile, if you like to give a go; another delicious version.
We will have this aside pilaf and more purslane with garlicky yoghurt; I will write down the recipe properly and share soon - have a good weekend, Afiyet Olsun🇹🇷

Shakshuka is also a popular dish in the Middle East and North Africa, made up of eggs cooked in tomato sauce, peppers, herbs and sometimes onions, which I greatly enjoy too. For us Turks though, the name and dish Saksuka refers to this delicious, summery meze of aubergines, peppers cooked in olive oil, served with tomato based sauce. I like to add courgette (zucchini) here too – it really is summer on a plate. Vegetables are tratidionally shallow fried in olive oil for this recipe. For a lighter and equally tasty option, you can bake them in the oven too. It is delightful with garlicky yoghurt aside, served at room temperature or cold. We enjoy it as part of mezze, you can also serve with grills and pasta.

A lovely afternoon of baklava making with my 17 year old son today 🧿😋 He enjoys cooking (and eating) though didn’t have a go at making baklava before. This time he wanted to make it for his friends and did a rather wonderful job. He said it was easier than he thought 😍
It really is easier than you think to make baklava at home, using filo sheets. I thought to share a few tips here, hope it helps and inspires. I copied my recipe link at my profile from #ozlemsturkishtable and few prep videos at stories. It’s a rewarding, delicious treat to make at home❤️
🧿 Once thawed, always open the filo sheets pack just before using and keep under damp towel. They tend to dry fast so work quickly.
🧿 One of the joys of making baklava at home is that you get to control how sweet you like it to be. The real thing isn’t overly sweet, like most commercially available ones abroad. I like mine fragrant with a little lemon juice, makes it less sweet and refreshing too.
🧿 Pour cooled syrup over piping hot baklava and let it soak. You can prep your syrup a day or two ahead.
🧿 Baklava should never be stored at the refrigerator, as the fat congeals, pastry absorbs the moisture and it becomes soggy. Just cover and store at a cool place in kitchen.

This delicious Green beans cooked in olive oil, Zeytinyağlı taze fasulye, was amongst the feast @canaltrustcafe prepared, one of my absolute favourites.
Traditionally prepared in “zeytinyağlı”(vegetables cooked in olive oil) style, it is served at room temperature, as a meze or vegetable course. French, runner and dwarf beans are all suitable to be prepared this way. Once cooked, you can store in the fridge for a good 2-3 days.
Sharing my recipe below from #ozlemsturkishtable , hope you enjoy it - and if you are ever in Bradford on Avon, do stop by at the lovely @canaltrustcafe for their delicious treats ❤️
Serves 4 – 6
500 gr / 1.1 lb runner (green) beans, trimmed and cut into 3 pieces
1 medium onion, finely chopped
4 cloves garlic, finely chopped
45 ml /3 tablespoon olive oil
400 gr / 14 oz canned diced tomatoes
1/2 cup water
Salt and black pepper to taste
lemon wedges to serve🍋
Saute the onion and garlic in the olive oil for a couple of minutes. Add the beans and canned tomatoes and cook for another 1 or 2 minutes. Pour over the water, season with salt and pepper. Bring the liquid to the boil, reduce the heat, cover, and simmer for about 35 minutes.

It was a glorious day and so glad the weather was wonderful, making the day extra special. This delicious Green beans cooked in olive oil, Zeytinyağlı taze fasulye, was amongst the feast @canaltrustcafe prepared, one of my absolute favourites.
Traditionally prepared in “zeytinyağlı”(vegetables cooked in olive oil) style, it is served at room temperature, as a meze or vegetable course. French, runner and dwarf beans are all suitable to be prepared this way. Once cooked, you can store in the fridge for a good 2-3 days.

Serves 4 – 6
500 gr / 1.1 lb runner (green) beans, trimmed and cut into 3 pieces
1 medium onion, finely chopped
4 cloves garlic, finely chopped
45 ml /3 tablespoon olive oil
400 gr / 14 oz canned diced tomatoes
1/2 cup water
Salt and black pepper to taste
lemon wedges to serve🍋
Saute the onion and garlic in the olive oil for a couple of minutes. Add the beans and canned tomatoes and cook for another 1 or 2 minutes. Pour over the water, season with salt and pepper. Bring the liquid to the boil, reduce the heat, cover, and simmer for about 35 minutes.

Lovely to find fresh broad beans, also known as fava beans at my local market today. I love their unique, earthy flavor, especially in this popular mezze in Turkey; Fava, Pureed broad beans with dill, lemon juice and olive oil. Traditionally, we use dried broad beans for this dip; this time I used fresh broad beans and it worked really well.
Blended with dill, olive oil and lemon juice, it is a delicious, earthy dip. It has a consistency of a thick hummus and is delicious on toasted bread or crackers. You can serve this dip with sautéed strips of red peppers in red pepper flakes (pul biber) infused olive oil here if you like; the sweetness of the peppers and the touch of spice from pul biber works well with the earthy broad beans.
Prepped ahead of time, it makes a lovely entertaining dish too - also keeps well in the fridge for a good few days👌🏻👌🏻👌🏻
