Hmm, just when I was starting to think I'd finally "cracked it" with the mucus solution. Yesterday was a really settled day. Still there throughout the day, but at a low level and no major flare ups.
Then this morning? Yep. Boom.... Back as bad as ever.
Ugh. Maybe that's how the detox works? Gradually eases with the occasional bad flare up, but less and less frequently til they die off altogether. Or am I just being delusional, lol?
Anyway, I'm weight training this morning. Upper body.
Woke up pretty tired, so started a little later.
Breakfast outside on a very dull, drizzly Monday morning before anything else.
I am all about fueling my body properly.
No more fasting. This is more technically "time restricted eating". Finishing eating sfter an early dinner, giving my digestive system a good break before breakfast.
I might occasionally go longer, but I night also occasionally go no longer than 12hrs.
My current training focus needs good quality feeding.
I took my usual half an hour walk straight after.
Upper body strength today. I hit those weights pretty hard.
Ended with a tuck jump sprint interval. Wow, total game changer!
Lunch was chicken salad with grapes and fake cheese. Coconut based. Actually pretty nice.
I decided to do something different for my afternoon fitness bout. Got on the rowing machine. Actually hate rowing, lol. Just feels like I'm on there for weeks! I put my earphones in and listened to a podcast. Made it slightly more tolerable.
Fresh fruit, walnuts, mixed seeds, ground coconut and a splash of olive oil after that.
Time to chill, now.
Today was a double chicken day. Had some for dinner too! Had that with avocado and veggies. Fresh ginger, herbs and spices.
I decided on an extra snack. Grapes and macadamia nuts.
Training hard and heavy has sent my "refeed" brain into overdrive!
And I might even make a second serving of my breakfast recipe tonight. Add some frozen blueberries.
That will add upto a whole lot of food, but meh, I can definitely add a few pounds without any worries. I'm lower than my normal maintenance goal right now.
Breakfast will be later tomorrow, so I'll also still get at least that 12hr digestive rest. No commitment either way. I'll just see how I feel later.
I feel fantastic at the moment. Yes, this morning's bad flare up knocked me sideways, but it was only maybe a couple of hours out of an otherwise excellent day!

Vegetable oils are the most consumed food in the world after rice and wheat and they make up 20% of our daily calorie intake. They are very versatile oils, and they are not only used for frying but also for coloring, flavoring, and making sure mixtures stick together. It’s still not ready, though. The oil has to be refined. Any sticky bits are removed. The coloring is removed by bleaching and then the remaining odors are removed. The oil is finished and ready to be sold. All of the other vegetable oils are produced in pretty much the same way. DAY 66, OCT 6, Rome, Italy 🇮🇹
Today was the day of our cooking class! We slept in till the last possible moment then made our way to the meeting point for the class. We found a professional chef with his own cooking class company, Chef-in-a-Day. His name was Federico, and he turned out to be an exceptional teacher and chef!
We thought we were meeting the group at 9 (because of our Viator reservation), but everyone got there around 9:30. And it was pouring rain! We could have slept for 20 more minutes! Once the whole group arrived (there were about 6 of us), we went to the market in Campo d’Fiori (also the site of the Michelangelo Moses statue) and got supplies for our day: a bunch of different tomatoes, peaches, broccoli, and some Roman zucchini. After that, we needed a bit more from the super market (cheese, flour, wine, etc.)
When we had all the ingredients, we walked to where we’d be cooking, which happened to be like 3 minutes walk away from our Airbnb. It was a beautiful space with a big table and a full kitchen. Chef Federico and his assistant Mildred got us all set up! We learned about the different types of tomatoes he had chosen, and how to make the best “mother” sauce for the pasta. It turns out that it all depends on the types of tomatoes! They’re rated based on their acidity (skin), bitterness (seeds), and sweetness (flesh).
After we chopped up all the veggies for the sauces, we also prepared the potatoes for the gnocchi (so excited!). This part was also super interesting because you boil the potatoes in a TON of rock salt! (360g per liter). This dehydrates the potatoes as they cook which will help with the gnocchi dough later on.
Then, we got to make the pasta! We made the dough in the traditional italian way by making a little volcano with the flour and cracking our eggs in the middle, beating them in the flour. Then, we kneaded it until it was fully combined and the gluten was developed, and we let it rest for a while (we enjoyed some wine while we waited). Chef Federico is also working on his own hotel business / cooking class combo in Umbria, and he produces olive oil from his property, so we got to try some of that with some bread and wine! So good!
Next, we had to prepare the stuffed pasta (Tortellini). The chef prepared and cut the dough for us, and then we stuffed it, really similarly to dumplings! The filling was ricotta, zuchini, parmesan, and some onion. Chels was really good at making them, she’s an expert already!
After the pasta had rested, we put it through the spahgetti machine, which each of us got to operate. When that pasta was ready, we cooked it up and had our first course! Angel hair spaghetti with tomato sauce & parmiggiano, basil, carmelized grape tomatoes, topped with Stracciatella cheese. Literally some of the best pasta we’ve ever had!
Then, we watched as the Chef prepared the tortellini, by cooking it al dente, then finishing it in a butter, water, and parmesan sauce. It was so creamy! He showed us how they actually use the starches in the pasta itself to help make the sauce creamy without adding a ton of extra stuff into it. This, of course was some of the best stuffed pasta we ever had too. This is ruining pasta for us people! We have been to the mountain top!
Last, but not least was the gnocchi! This was cool to cook as well, once you make the dough and roll it out and cut it, that’s all you need to do! Throw it in the boiling water, and once it floats, it’s ready to take out. The sauce for the gnocchi was based on the broccolis from earlier, with tons of olive oil, parmesan, and that’s all! But it was so creamy and delicious!
For dessert the chef had prepared some peaches in white wine, and it was the perfect ending to the perfect meal.
We cannot recommend this experience enough, it was worth EVERY PENNY.
At this point it was around 4pm, and we were finished for the day. We went back to the airbnb, and relaxed and then went to sleep! (btw Sam finished the entire season of Squid game in one day, it was so crazy!).

What’s the deal with palm oil?
You eat a plant-based diet. You never purchase or wear (advertise) clothing made from any animal. You don’t support businesses that pro-animal cruelty or anti-LGBTQ+ or pro-racism. You understand the false assumptions linking morality and distance travelled, morality and tradition/culture. morality and superiority. You wouldn’t dare purchase from Nestle or any of their smaller businesses. HOWEVER, you still eat palm oil.
So what’s the deal with palm oil?
I’m glad you asked.
Fundamentally, palm oil is the oil extracted from oil palms. Oil palm trees are native to West Africa. Today, however, the largest producers and exporters in the world are Malaysia and Indonesia. About 85% of the oil is used for food. It is found in over half of packaged foods at the grocery store, such as ice cream, shampoo, lipstick, detergent, bread, fast foods, and nut spreads, just to name a few.
Palm oil destroys the health of humans and non-human animals as well as the environment, and exploits workers and habitats every day.
Let’s start with the environment:
The tropical plants thrive in a wet, warm climate - the tropical rainforests. Unfortunately, these regions of rich biodiversity are being desimated at alarming rates in order to provide land for these huge plantations.
Palm plantations are the leading cause of rainforest destruction in Malaysia and Indonesia, and they produce 90% of the world’s palm oil (Rainforest Rescue).
Every hour, a rainforest acreage equivalent to about 300 soccer fields is cleared for palm oil plantations. At current rates, by 2032, 98% of Indonesia’s rainforests may be gone.
The loss of rainforests:
contributes to global warming emissions: the Indonesian rainforests grow on tropical peatlands, a major carbon sink. After clearing native trees, all remaining vegetation is burned and the land is drained. This process releases drastic amounts of CO2 into the environment. Clearing rainforests accounts for about 10% of TOTAL GLOBAL WARMING EMISSIONS.
Harms animals and their habitats - Rainforests used to produce palm oil are home to unique species of animals and plants, some found nowhere else in the world. Deforestation is destroying crucial habitat for endangered species including the orangutan, elephant, and tiger.
Pollutes the air - Burning rainforest lands to make way for oil palms creates significant air pollution. Exposure to the smoke from such fires is estimated to contribute to 339,000 deaths every year in Africa and Southeast Asia. Oil palm plantations also use copious amounts of chemical fertilizers and pesticides. In fact, fertilizer use in Asia increased by 1,900% in the last 40 years, primarily due to the growth of the palm oil industry. Damn.
Palm oil is also used for biofuel. Almost 50% of biofuel imported to the European Union is used for motor vehicles.
Okay, okay, so it’s terrible for the environment. And for human animals?
Palm oil ruins the lives of people who depend on rainforests for their livelihoods.
Up to 2 million Indonesians work in the palm oil industry. Laborers are subject to low wages for long hours of grueling work. Reports of forced labor and slavery are persistent and more than disturbing.
Child labor is another serious problem. The industry often compels children of palm workers to work, treat them poorly, and pay them dreadfully low wages (if they pay them at all).
The industry also violates the rights of indigenous peoples by seizing extensive tracts of their land (forced eviction).
The palm oil industry loves to remind everyone that it provides work for people. You know what else provides work for people? Prostitution. Three cheers for terrible arguments!!!
Health Impacts
Like all oils, palm oil is the extraction: what is left over. To make this analogy understandable, since most people aren’t eating palm trees anyway, let’s use the analogy of flax seed oil. I quickly fried my Lions lane mushrooms with garlic, savoury yeast flakes for extra cheesy flavour and hemp seeds- and a touch of salt. Then filled the dough which was pressed in pasta machine and created home made ravioli.
Then burnt a good amount of fresh sage leaves in a olive oil and fried my cooked ravioli in that oil. Finished with salt flakes, freshly cracked paper, splash of lemon and sprouts .

Sand and Sandwiches
When I posted pictures of Clacton Pier from our road trip last month, alot of friends recalled fond memories of their childhood, whizzing down the helter skelter and eating whelks on the beach. How many of those friends returned to Clacton between puberty and the menopause? I’m guessing zero.
British seaside holidays - especially those on the bracing North Sea coastline - are freeze-framed in our consciousness as an ice cream in a 10-force gale, or a sandy mouthful of picnic behind a wind break. That’s if you ever got out of the car to eat. My own holiday memories involve that great British institution The Car Picnic: cold baked beans on crispbread, washed down with a thermos of tea, watching the rain lash the windscreen before going to queue for Les Dennis and Dustin Gee at the Winter Garden.
When I was very young we would follow my half-sister (a dancer) around the seaside panto circuit, performing variously alongside Danny la Rue (the ultimate drag queen), Dickie Henderson (a comedian I announced I wanted to marry, aged 5) and The Clitheroe Kid (there would have been no Crankies without him. You figure out if this was a good thing). Any dreams I had of a career in showbiz were quashed by seeing the leading lady in Robinson Crusoe sitting in her dressing room in a candlewick robe drinking soup out of a flask and puffing aggressively on a Malboro’ Light . Cold soup did not signal glamour, and no amount of gourmet gazpacho over the years has made me change my mind.
But back to Clacton. We had come for the day from our glamping site near Colchester (Covid has done nothing if not made us adventurous), hoping to build better seaside food memories in a post-Jamie Oliver era.
It didn’t bode well that we couldn’t get warm. Icy winds blew from the stall selling an irresistible if confusing combination of ice cream and chips, right through the rat run of Vegas-adjacent slot machine arcades, where you could win anything you wanted as long as it was a baby Yoda.
But nestling in the back streets was a cafe called Tracie’s which, unlike those around it, was teeming with people. Its fogged up windows promised warmth, so we snapped on our face masks and dived in.
And we were rewarded. While Adam couldn’t think past a burger and chips (no blame there) I noticed a chalkboard with their special of the day: goat curry. I figured that restaurant which stakes their reputation on a goat curry has to serve a good one - and I wasn’t wrong. Dark, glossy and caramelised from long, slow cooking, with just the right lick of habanero chilli pepper and meltingly tender potatoes, served with a flavourful jollof rice.
From the gleeful expressions of our fellow diners it seemed that Tracie, the owner-chef, is turning out plate after plate of delicious and consistent food - including Adam’s burger and crispiest fries. But that curry, over and above all else, banished all my dodgy seaside supper memories for good and replaced them with a whole bowl of yum.
I went straight home and experimented, and here is the result. You might feel like an ice cream to follow (with or without a side order of chips) so my choc chip sorbet ice cream should fill the bill nicely. And if, like me, your childhood is sprinked with the crumbs of a back seat picnic, then I hope that my Pork Cholas will change the course of your summer outdoor eating.
Goat Curry
Unlike Tracie, I have developed this as an off the bone curry. Still full of flavour but less fiddly to eat. Serve with jollof, coconut or plain basmati rice. Serves 6-8
Ingredients:
2kg goat leg, off the bone and chopped into generous chunks
4-5 garlic cloves, crushed
1 red pepper, cubed
1 scotch bonnet/ habanero pepper seeded and chopped finely
1 in piece of fresh ginger, grated
2 tsp kosher salt
2 onions chopped
1-2 tbsp. Sunflower oil
Few sprigs fresh thyme
1 tin cherry tomatoes
3 tbsp plain yoghurt
250 ml beef stock
1 small tin coconut cream
200g potatoes, peeled and roughly chopped
Curry Paste:
2 tsp allspice
3-4 tsp cumin powder
2 tsp. Turmeric
½ tsp. Cinnamon
1 tsp ground black pepper
1tbsp. Reloja powder (this is a Puerto Rican mix of toasted ground cinnamon sticks, dried chillis, cumin, pumpkin seeds, bay leavesm sesame seeds and cocoa powder)
3 tbsp sunflower oil
How to make
Marinate the goat in the garlic, ginger, salt, thyme and chopped scotch bonnet. Leave the flavours to develop over an hour or two.
Heat the oil in a large, deep casserole, then fry the onion and pepper until brown. Add the curry paste and fry until the oil starts to separate and the aromas hit you. Add the marinaded goat meat and stir until coated.
Add the tin of cherry tomatoes, the beef stock and the coconut cream, stir well to combine then reduce heat and simmer, covered for about 3.5 hours.
Add the chopped potatoes, then simmer, uncovered, for a further 30 mins until the potatoes are cooked but still holding together. Test the goat for tenderness - it should be meltingly tender - and serve.
Choc Chip Sorbet Ice Cream
How can you have an ice cream and a sorbet all in one? Simple - by using my friend Sam’s Chocolate Sorbet recipe (see my Last Kitchen Show blog) as a base, then adding whipped egg white, double cream and of course chocolate chips. An ice cream maker will make this effortless, but don’t despair if you don’t have one. Just remember to take the ice cream out of the freezer a couple of hours after freezing and whisk thoroughly before returning to the freezer. Serves 4-6
Ingredients For the sorbet mix:
200 g caster sugar
50g cocoa powder
50 g 70% dark chocolate, broken into pieces
1 tsp. Vanilla extract
600 ml water
To finish:
1 egg white
300 ml double cream
30g dark chocolate chips
How to make:
First, make the sorbet mix. Bring the water to the boil, then whisk in the sugar and cocoa powder. Simmer for 5 minutes, then take off the heat and stir in the chopped chocolate and vanilla extract until smooth. Cool (you can make this the day before and refrigerate over night)
Whisk the egg white to soft peaks, and in a separate bowl, whisk the double cream until just holding its shape. Fold the egg white and cream into the sorbet mix, then mix in the ice cream maker.
Five minutes before it is ready, add the chocolate chips to the ice cream as it mixes (or if you are not using a maching, add the choc chips after you have whisked the mix out of the freezer). Transfer to a plastic container, cover and freeze. Bring to room temperature for around 20 minutes before serving.
Pork Cholas
This is the national sandwich of Bolivia - probably getting its name from Cholitas, Bolivia’s indigenous women. You can just serve this with the traditional salsa verde but I also like to add a small dollop of Stokes Jalapeno Jelly for extra zing. I made my own crusty bread rolls for these photos, but sandwich making shouldn’t be a morning-long process, so just buy 6 of these and off you go. Makes 6 Cholas.
Ingredients:
1.5kg pork shoulder off the bone, skin removed and aside
1 tsp fennel seeds, crushed
1 tsp salt plus extra for salting the skin
1 tsp garlic salt
Freshly ground black pepper
1 tsp chilli flakes
2 tbsp. Olive oil
300ml cider
6 crusty white bread rolls
Lettuce
Salted butter
For the salsa verde:
3 tbsp. Flat parsley
1 tbsp. Mint leaves
3 tbsp. Capers
6 anchovy fillets
1 clove garlic
1 tbsp. Dijon mustard
Juice of ½ a lemon
120 ml extra virgin olive oil
How to make:
First, roast your pork (you can do this the day before). Mix the fennel seeds, salt, garlic salt, pepper and chilli flakes in a bowl. Add the olive oil and stir to combine, then rub this all over the pork shoulder. Set aside. Rub salt all over the skin (which should be scored) and then pop, uncovered, in the fridge.
Heat the oven to 240C. Put the pork shoulder into a roasting tin and pour the cider around it. Pop into the over, uncovered and immediately turn the oven down to 180C. Pat the skin dry, salt again and put onto a rimmed baking sheet. Slot into the top shelf of your oven and roast skin and shoulder for 2 - 2.½ hours. The pork should be tender and the crackling super crisp. Set both pork and cracking aside to cool.
To make the salsa verde: put all the ingredients except for the olive oil into a blended and pulse. You dont want this mix to be super smooth. Tip into a bowl, add the olive oil and whisk. Cover and chill until needed.
Split the rolls and butter, then layer with a lettuce leaf, slices of pork, a tbsp. Salsa verde and a dollop of jalapeno jelly (optional) before sandwiching with the crusty top. Serve with shards of crackling on the side.

I want to share with you a recipe that I make often for myself and my family. This recipe is full of veggies and proteins, and a great way to start eating healthily. This dish is easy to make too!
I love to eat falafal, which is a Middle Eastern chickpea fritter that’s been deep-fried and consumed with dipping sauces. It’s super delicious but I feel that it’s a bit messy to make due to the frying part and isn’t as healthy when consumed too much. Therefore, I have created these rounds in place of that and it’s delicious and a lot healthier! I can make a vegetarian sandwich with any types of spreads I want in there, and boy or boy, they are delicious!
Cooking is an art and it requires all of your 5 senses. Use this to your own advantage to create a flatbread that you know you will eat. For example, if broccoli isn’t your thing then substitute it for some other greens or vegetables. If cauliflower is what you have on hand, use it! But do definitely add in carrots because it will make it sweet without adding any sugar.
Remember this: Once dried chickpeas are soaked it will bulk up in double or even a little more in size/volume. You only need to soak 4 cups of dried chickpeas overnight, and you’ll be getting about, close to 10 cups of chickpeas for this dish.
I love it in sandwiches! If you wished to eat it in a sandwich, here are some great tips on spreads make it even more delicious. Although, you don’t have to take my words for it. Instead, you can experiment on your own dipping sauce or spreads. I love hummus and guacamole in there to help hold everything together. Also, sometimes I do use a horse-radish mayo that I make by adding a Tbsp or so of horse-radish to mayo (of your choice) and add in some fresh cracked black pepper and cayenne peppers. Again, use your own senses to build a sandwich to your liking!

My Homemade Chickpea Flatbread
Yield: 32 each/rounds
Ingredients
10 cups chickpeas, soaked overnight from 4 cups dried chickpeas, rinsed a few times 1 bunch broccoli florets, 3 heads, rinsed and chopped 4 medium carrots, peeled and chopped 1 large yellow onion, chopped 1 bunch kale leaves, rinsed and chopped 1 head garlic, peeled 5 cups all-purpose flour, or multigrain flour, more or less as needed 1 bunch Italian parsley leaves, stems removed water, as needed 2 Tablespoons kosher salt, to taste 1 Tablespoon black pepper, to taste 2 Tablespoons cumin powder 1 Tablespoon coriander powder 2 Tablespoons milled flax seeds, optional 2 Tablespoons chia seeds, optional Extra Virgin olive oil, as needed
Directions:
1. To make the chickpea mixture: In a food processor; combine 2 cups chickpeas, 1 cup broccoli florets, 1 cup carrots, 1 cup onions, 1 cup kale leaves, 2 Tbsp parsley, and 2 garlic cloves; turn it on and slowly add in 1 cup water to help move mixture to blend easily. Stop and pulse a few times until mixture becomes a paste (stop the machine to scrape down the sides a few times before pulsing, and it will help process the mixture more easily). Remove the mixture to an extra large bowl, and repeat this process until all ingredients processed.
2. In the extra large bowl of chickpea paste add; flour, salt, black pepper, cumin, coriander, flax seeds, and chia seeds. Mix well; you may need to wear food gloves and use your hands to mix it. It should be a sticky paste, with no liquid remains. Cover it and allow the paste to rest for 15 to 20 minutes.
3. Preheat oven to 400 degrees F. Line two racks in the center of the oven.
4. Line two large sheet pans with parchment paper. Use a 1/3 cup to scoop the paste (I used 6 scoops per sheet pan and place evenly on the pan). Use a small off-set spatula or a butter knife, spread the mixture out to form a large thin round disk, about 1/4 in thickness. Drizzle 1 Tbsp Extra Virgin Olive Oil on each rounds and spread it evenly with the off-set spatula or a brush.
5. Bake for 15 minutes, then rotate the sheet pans from bottom to top and top to bottom and bake again for another 15 to 20 minutes or until the sides are golden brown. Remove from oven and cool the flatbread in pan for 5 minutes. Remove flatbread and cool completely before store away.
6. Using the same sheet pan and parchment paper; repeat step #4 again until all rounds are baked.
7. Ready to use for making sandwiches or enjoy it with dips or spreads, such as hummus and/or guacamole.
8. To store in freezer: Wrap 6 rounds in parchment paper (the parchment is big enough to wrap it all around) to make 1 pack. Place two packs (12 each) in gallon Ziploc bag. Squeeze air out and seal the opening. Label bags and store in freezer and it's good for 1-2 month(s).

2 banana shallots, finely chopped
½ a fennel bulb, chopped
2 strips lemon zest
1 bay leaf
½ tsp. ground fennel (or smash fennel seeds in a pestle and mortar)
1 glass dry white wine
500g clams
1 tsp chilli flakes
Small bunch parsley, torn
Drizzle of single cream (optional)
2-3 thick slices ideally San Francsico sourdough
How to Make
Heat half the oil in a large frying pan. Add pancetta or lardons and cook, stirring occasionally, until brown and crisp (around 3-4 mins). Add sliced garlic and cook, stirring, until garlic is golden.
Reduce heat and add the shopped shallots and fennel. Cook, stirring occasionally, until softened and onion is translucent. Add lemon zest, bay leaf, ground fennel, ½ cup wine and a pinch of salt. Increase heat, stirring occasionally, until wine is mostly reduced but mixture is still reasonably fluid (this should take about 2-3 minutes). Transfer mixture to a medium bowl; discard lemon zest and bay leaf.
Wipe out the frying pan and pop back on the heat. Heat 2 Tbsp. oil until sizzling. Add sourdough slices and griddle golden brown on both sides. Drain on kitchen towels, then cut 1 garlic clove in half and rub one side of each toast with cut side of garlic.
Back to the frying pan for one last time and heat 1 tbsp. oil. Crush the remaining garlic clove and add to the oil, stirring, until it begins to turn golden. Add clams, the pancetta/ garlic mix and remaining ½ cup wine. Increase heat and bring to a boil. Cook, uncovered, until liquid is reduced by half and clams are open (discard any that do not open), which should take 5–7 minutes. Add a drizzle of cream if desired, together with the chilli flakes and parsley and cook 1 minute longer. Taste and season with kosher salt and more chilli flakes.
Place fried bread on plates and spoon clam mixture and cooking broth over. Drizzle with oil and serve.
Pork Belly Bao

250g plain flour
2 tsp dry active yeast

50ml milk
1 tbsp. sunflower oil
Chopped spring onions and coriander to serve.
For the char siu pork
2 tbsp. sunflower oil
1kilo pork belly, no rind and cut into thick slices
2 tbsp each dark muscovado and 2 tbsp. light brown sugar
4 garlic cloves, finely chopped
Small piece of ginger, sliced
2 star anise
80 ml hoi sin sauce
100 ml Shaoxing wine
2 tbsp. dark soy sauce
100 ml water
¼ tsp five spice powder
Kosher salt and black pepper.
How to make
First, prepare the pork (you can do this ahead and re-heat).
Heat the oven to 160C, or Gas 3.
Season the pork belly generously, heat the oil and brown the pork in a large pot, in batches. Drain and put to one side.
Mix the hoi sin, Shaoxing wine and dark soy sauce in a jug. Drain the saucepan of oil, then put back on the heat, add the sugar and a little water, and watch closely until it starts to turn to caramel. Working quickly, add the chopped garlic, ginger and star anise, stir then add the soy, Shaoxing and hoi sin mix. Add the pork back to the pan, stir to coat, then add the water and the five-spice powder. Cover and pop into the oven for about 1.5 hours.
Take the pot out of the oven and remove the lid (take care to use oven gloves - don’t forget the lid is hot too). Put it on a hob ring and turn the heat up medium/ high, then stir the pork belly while the sauce bubbles down to a sticky mess. Cover and leave to one side.
If you want everything to be ready at the same time, start making the buns while the pork is in the oven. Tip the flour and sugar into a large mixing bowl, preferably in a free-standing mixer with a dough hook. Add the yeast to one side of the flour and the salt to the other (mixing the salt and yeast too soon prevents the yeast from activating). Then add the water, milk and oil and mix with a dough hook for about 10 minutes, until the mix is smooth and elastic.
Pop the ball of dough into a greased bowl, cover and leave for an hour in a warm place until it has doubled in size.
After an hour, tip the dough onto a floured board, and roll it into a sausage, then cut it into 10 equal portions. Have some squares of baking parchment cut and ready on a lightly oiled baking tray or two. Roll each portion of dough into an oval, lightly oil the flat surface, then lay a greased chopstick across it.
Flip one side of the dough over the chopstick so you end up with a half-moon shape, then slide the chopstick out and lay the bun on a square of baking parchment. Repeat with the other 9 portions.
Leave the buns, lightly covered, to rise for another hour.
Heat the water in your steamer, and when coming to a rolling boil, add the buns (as many as will fit at a time) cover and steam for 10 minutes. Transfer to a wire rack to cool.
If you cooked the pork much earlier, reheat by adding a cup of water to loosen up the sticky caramel mixture and simmer for about 10 minutes. Transfer the pork to a plate or board and slice up or shred. Chop the spring onions (green stalks included) and roughly chop the coriander.
Spit each bun, fill with sliced/ shredded pork, add some spring onions and coriander and serve.
Turmeric Cake
I have never eaten this in ‘Frisco, but I feel that I should have. It’s almost vegan (properly vegan if you swap the milk for almond milk), has the anti-inflammatory rhizome-du- jour, turmeric, as it’s hero ingredient, and has the taste and texture of a light fudge. This is originally a Syrian delicacy and you can find a version in the Almond Bar cookbook. They also sell a delicious version at Café Pera in Twickenham, which uses coconut oil as its fat. It is a combination of the two on which my recipe is based. Serves 10-12.
Ingredients:
440g fine semolina
100g chickpea flour
60g plain flour
1 tsp baking powder
1 cm piece fresh turmeric, peeled and grated
250g coconut oil, melted then cooled.
385g unrefined caster sugar
375 milk or almond milk
2 tbsp. tahini
1 tsp vanilla essence
Whole blanched almonds, toasted.
How to make
Preheat the oven to 190C/ Gas mark 6.
Rub tahini over the base and sides of a 23cm springform cake tin and put to one side.
Combine the flour, chickpea flour, semolina and baking powder in a large mixing bowl.
In a separate bowl, combine the melted coconut oil, sugar, vanilla, milk, grated turmeric and 60ml water and whisk together. Pour into the dry ingredients and mix until smooth and golden yellow.
Pour the cake mix into the prepared tin and top with the lightly toasted whole almonds.
Bake for 35-40 minutes, until the cake turns a golden brown, then remove from the oven and leave in the tin for about 10 minutes before turning out carefully onto a wire rack to cool completely. Transfer to a serving plate.
This tin will keep in a tin or wrapped in clingfilm for a week.
