Cracked open a barrel pick of Old Elk Rye from Cypress Craft Beer and Liquor and the Orange County Bourbon Society. I have never had a bottle like this. There is so much going on flavor-wise with butterscotch, mint, spearmint, and a lingering rye spice that goes all the way down to your stomach. Paired with a Camacho Factory Unleashed toro. ..... One thing I definitely miss due to covid is the whiskey events where you get to taste through a bunch of different whiskey samples to either refresh your memory on something you have tried or taste something completely new that you may have otherwise skipped at a bar or liquor store. Core expessions are typically overlooked when you have a big collection of unique bottles and access to allocated releases. I think it’s important to always keep exploring the wide world of whiskey and that’s what I’m doing here with some Old Elk. I celebrated BourbonDay in Indiana, long the source of some of the best American whiskey. Many brands source from Indiana’s MPG then bottle under their own labels. Some are open about it some not. Water, cask & blending matter, so even the same recipes from MGP can end up tasting different. For years MGP’s contract distilling went under the radar. Now it’s better known, some of its products even sought-after. Recently, longtime MGP MasterDistiller Greg Metze went to Old Elk in Colorado. Like many new distilleries OldElk is temporarily sourcing spirit. Unsurprisingly it’s open about it. What I find compelling isn’t some morality tale, but OldElk’s mashbill (recipe) & the way they proof. OldElk’s mashbill is 51 % corn (bourbon’s minimum) 15% rye & 34% malted barley – nearly double that of the next highest barley bourbon. Many bourbons don’t use any barley, which is sweeter than rye but not as sweet as corn or as mellow as wheat. It has more complex carbs & protein than corn, which is why Scotch malt whisky (100% barley) is so different than bourbon. Differences in grain lead to significant differences in fermentation & later aging. OldElk also has a different approach to proofing. Water is added to bring it to a rather mild bottle proof of 44% abv over weeks rather than the typical day or 2. The idea is to minimize heat that would dispel volatiles. Adding water to alcohol is exothermic (releases heat). The concern is that it shakes loose yummy congeners. OldElk’s “Slow Cut” is an attempt to preserve those yummy congeners & give the whiskey a softer mouthfeel. I didn’t get to sit with it long enough to make it my new best friend. But it absolutely has a velvety mouthfeel. It’s not in league with the best Scotch but for $45? Let’s just say while still on my trip to Indiana I called NY’s ParkAve Liquors & asked them notify to me when it hits the East Coast. Then I drove to BigRedLiquors which has amazing selection of reasonably priced bourbon. Alas no OldElk. However since the heart of bourbon country isn’t the heart of Scotch country there was a SpringbankLocalBarley 11 alone & dusty on the shelf. I did right by it.
