Hey guys! Its been a while since i posted anything, let alone a recipe, but this one was so good i couldnt not share!
So the original recipe i found on pinterest over a year ago now and i never made it, just didnt peak my interest. Being 38 weeks pregnant and tired all the time, the easyness of this recipe was appealing and right up my ally this week, so i gave it a shot! And i loved it so much i told simon i wanted to make it again this week, he also loved it and said that might be a little weird. Well being tired it was calling my name today when dinner was demanded. But, i decided i would add my own touches to it. And, OH MAN! It was so good, It is so easy! So i will post the original recipe. I will post my recipe. And this recipe seems so versatile i have a few other ideas too that could be done that i will share! Keep in mind, its not very healthy but it is sure to impress the whole family.
SO the original recipe i found on pinterest was called “OHMYGOSHTHISISSOGOOD baked chicken”
chicken breast or tenders, I used 2 or 3 cut thin ways
1 cup real mayo(NOT MIRACLE WHIP)
1/2 cup grated parmesan(the cheapo kraft shaker stuff)
1 tsp each salt and pepper
1/2 tsp garlic (optional)
Preheat your oven to 375. Place chicken in a casserole dish, mix everything together for the topping and smear it over the top of the chicken, bake for 30-35 min. done. easy peasy!
HOW I CHANGED IT: i did not use garlic or salt, instead used garlic salt. like i said i was searching for easy lol.
This time, i added ...
-shredded montery jack cheese, about 1/2 cup
-a few tablespoons of frozen spinach
-1/2 cup fresh diced baby bell mushrooms, maybe more
mixed it in with the topping and baked it just the same and holy moley! IT WAS AMAZING!!! im calling this the “OMG chicken bake” for the rest of my life
A few other ideas i have:
sundried tomatoes, artichoke or spinach and mozarella
or
a drained can of diced chilies, and some shredded pepperjack cheese, maybe a little sour cream?
idk seems pretty versatile! i hope some of you get to try it and i hope it becomes an easy staple in your house as it has become in mine!

“OHMYGOSHTHISISSOGOOD” CHICKEN BREAST RECIPE
1 cup mayo (Hellmanns…not miracle whip)
1/2 cup Parmesan
salt/pepper to taste
1/2 tsp garlic (optional)
boneless, skinless chicken (I used tenders here and always organic)
Mix up all your awesome ingredients…its not that many but trust me!
Layer on your chicken…do not overdo it or it won’t brown up properly
Bake in oven on 375 for 30-35 min
Want salad too? cut up tomatoes (and/or cukes). Add spices (salt/pepper, oregano, basil, onion powder, garlic powder) and balsamic vinegar. Done.
Do breakfast for dinner. An egg. Some toast. A piece of fruit. Done.
Make a little pasta (about 1/4 to 1/3 cup is single serving). Add sausage, sun dried tomatoes, cheese, spinach. Add spices to taste.
Make pizza. You can buy pizza dough, a can of sauce, and you can put whatever you want on top. I like to peruse a local pizza place's menu for ideas sometimes.
Make chili. You literally brown the meat (or not). Dump in some tomatoes and beans and peppers and spices. Cook for a little while. Done.
Want more Mexican? You just need tortillas, some cheese, beans or meat. Cook any meat first. Fill up the tortilla and heat it up in the oven or microwave for a few minutes (the cheese just needs to be melted).
Do any of u have decent recipes that are like 5 ingredients (not including spices) and take 45 mins or less to prepare i gotta stop eating sandwiches for dinner
