These Mistakes Should be avoided when Making Homemade Pasta.
Making fresh pasta at home can be incredibly rewarding, but it often comes with challenges like sticky dough, crumbly noodles, or machine issues. Achieving the perfect pasta starts with getting the dough consistency right.
If the dough is too dry and cracks while rolling, add water slowly, a teaspoon at a time, kneading well and letting it rest for 30 minutes. On the other hand, if the dough is too wet and sticks to the machine, sprinkle semolina or all-purpose flour and knead until it becomes smooth. A simple finger press test can help—if the indentation slowly springs back, the dough is ready.
Proper care of your noodles making machine is essential. Before the first use, wipe the rollers with a dry cloth to remove any factory residue.
Misaligned rollers can create uneven sheets, so ensure they’re adjusted using the machine’s knobs. After each use, brush off any leftover dough and apply food-grade oil to keep the machine in good condition.
Rushing through the rolling process is another common mistake. Starting with a thin setting too soon can weaken the dough, causing it to tear.
Begin at the widest setting and gradually reduce the thickness. Folding the dough using a tri-fold or book-fold method before rolling again will strengthen it. Finally, the cutting and drying process requires attention.
Blunt cutters can tear noodles, so sharpen or replace blades regularly. Adjust the thickness based on the pasta shape you're making. Allow pasta to dry at room temperature with good air circulation to prevent cracking or mold. With these tips, you'll create delicious, fresh pasta every time.
