#HOKKIENmee. #HokkienChar (as it's known in the Northern part). Last week a few times this food topic appeared in my newsfeed. There are also confusion that mee hailam is same as hokkien mee. It's NO SAME! Hailam and Hokkien are 2 different dialects. So the mee/noodles also different. Mee hailam is yellow noodle cooked in seafood broth, use less dark soy sauce and has more gravy. Hokkien Mee, at least the one that we, Ah Lo and Ah Li Li, used to enjoy are darker in color. Don't knw why but seems like hokkien dishes use a lot or dark soy sauce "Orr tau yu". Hokkien mee also has less gravy and traditionally cooked with #MeeBesar (#tuA khor or tuA tiau mee) in Cantonese it's called "tai loke meen". This week we open order for our version of Hokkien Mee, we will go look for the tai look meen first.
