Thistle Chapel, St Giles‘ Cathedral, Royal Mile, Edinburgh.

King David I founded St Giles’ in 1124, during which time the bond between Rome and the Scottish church was becoming closer. St Giles’ was built on the very eastern edge of Edinburgh and pre-dates most of the Old Town. When David I later founded the Abbey of Holyrood he gave the abbot permission to build houses up the ridge towards St Giles’, establishing the Canongate burgh and forming what is now known as the Royal Mile.

The Order of the Thistle has roots in the Middle Ages, but the present-day order was largely created in 1687 by King James VII of Scotland (King James II of England). The nave of Holyrood Abbey was adapted as its chapel, but in 1688 the Abbey was ransacked by the Edinburgh mob, furious at King James’ Roman Catholic allegiance. After that, the Knights of the Thistle had no chapel of their own for over 200 years.

The Thistle Chapel was designed by Robert Lorimer and finished in 1911. It contains stalls for the 16 knights, the Sovereign’s stall and two Royal stalls. The chapel contains a wealth of detail, both religious and heraldic, and much of it peculiarly Scottish, including angels playing bagpipes.

Carlowrie Castle was built in the Scottish Baronial style between 1852 and 1855 on the outskirts of Kirkliston, a town approximately 10 miles from Edinburgh, Scotland. It has only ever belonged to two families: the Hutchison family, who built it, and the Marshall family, who acquired it 130 years later.

This is a one off, special edition limited to under 100 bottles. The spirit has been aged in American oak casks that gives the golden colour with tasting notes of creamy vanilla fudge and subtle spice. You won't be able to resist opening their bottle for a wee dram! 🥃
