cauliflower pita sandwiches (veg)
total time: 20 min (ish)
makes: 2 sandwiches

ingredients:
1/2 head of cauliflower
2 tbsp olive oil
2 tsp sesame oil
1.5 tbsp zaatar seasoning
1 tbsp paprika
2 tsp salt
2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ginger powder
1/3 tsp cumin
feta cheese (ok to omit if vegan)
1/2 cup tzatziki sauce (there are great veggie and vegan options at the grocery store or i made my own vegan alternative using almondmilk greek yogurt that i like better!)
1/2 cup chopped lettuce
1 roma tomato, diced
pickled red onions
2 pitas (i’ve been using whole wheat recently, but white works too)

how to:
add cauliflower and all oils/spices to a bowl. mix until well-covered. heat a large saucepan on medium-high heat. add spiced cauliflower and cook until desired softness (approx. 7-10 min)
heat pitas at 350F for approx 2 min each side (or until soft and warm). spread tzatziki on pitas, add cauliflower, and top with lettuce, tomato, pickled red onions, and feta cheese (optional).

what i love:
i’ve been going to the keys with some frequency the last year or so and there’s this one mediterranean restaurant there that i am OBSESSED with. they have simply the most delicious create-your-own pita with the best, and i mean the BEST seasoned cauliflower ever. i made this recipe because i was missing that restaurant and approximated the seasonings based on what i remembered. they probably also used turmeric because i remember it being more yellow than this is, but i subbed in an assload of zaatar and paprika to make up for it. makes me miss the keys but this is a pretty good substitute. not to mention, it’s a super delicious and filling recipe that doesn’t take very long at all! feel free to pair with a greek salad, seasoned french fries, or your favorite veggie with hummus dip.
