What is cascara? Spanish for “husk” or “skin”, “Cáscara” is the dried fruit of a coffee cherry. Normally coffee cherries are considered a by-product of the coffee-making process and are either discarded as waste or used as compost. Once separated from the coffee seed, ripe coffee cherries are oven-dehydrated to preserve their flavors as well as kill any unwanted bacteria. The resulting product comes in the form of a completely edible, dried fruit ideal for steeping like tea. In some coffee-growing nations coffee, cherry tea is a common drink notably in Bolivia, as well as in Yemen (where it is called qishr) and Somalia (where it is called bun). While cascara isn’t exactly coffee, it isn’t tea either. Because cascara comes from the genus Coffea instead of the Camellia sinensis plant, it can’t be classified as a true tea. Cascara is often described as having a sweet, fruity taste with notes of rosehip, hibiscus, cherry, red currant, mango, or even tobacco. Research is recently uncovering the benefits of the plant polyphenols found in cascara. Polyphenols are naturally occurring compounds in plants that protect the plants from insects and disease.
